How to Season Your Pans

Today we're going to show you how to season cooking pans. Pan seasoning is essential to any food service operation, as it keeps your pans from rusting and your food from sticking to the pans. A cast iron skillet, a carbon steel fry pan, a carbon steel wok, a tin-plated pan, and a hard coat aluminum pan.

Pan seasoning is essential for keeping your pans performing their best in your kitchen. This instructional video will show you the proper steps to seasoning your cooking pans based on their material.

How to Season a Pan

How to Season a Pan

For a carbon steel pan, start by washing, rinsing, and drying the pan. Heat the pan on your range on medium to high heat, then add shortening to the pan. Use a clean dry towel to spread the shortening around the interior of the pan, creating an even coat. Remove the pan from the heat, wipe out the excess shortening and let it cool. You can repeat this process up to 3 more times. For a cast iron skillet, preheat your oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil and set aside. Wash, rinse, and dry your skillet. Place the skillet in the oven for 15 minutes. Remove and coat the entire skillet with shortening, inside and out. Place the skillet in the oven for 45 minutes with the baking pan on a rack below it to catch any mess. You can repeat this process up to three more times.

Customer questions about this product

How can I properly care for cast iron surfaces?
In order to prevent unwanted build-up of oils, grease, and food, surfaces should be cleaned after use while still slightly warm. Harsh chemicals or scouring pads should not be used—only hot water and a cloth or sponge are needed. If some areas require extra cleaning, a mild scouring pad can be used. Please refer to our Pan Seasoning Guide for further information on properly cleaning and seasoning cast iron surfaces.
My new cast iron feels rough in some areas. Is this normal?
Yes. This is a result of the sand casting process. With use and replenishment of the seasoning, the pan will become smoother. Unlike other types of cookware, Lodge Cast Iron only gets better with use. For concerns about roughness, it is OK to use a fine grade of sandpaper to smooth out the rough areas. Make sure to re-season the item before using.
How is Lodge's pre-seasoned cookware seasoned?
All of Lodge's pre-seasoned cookware is seasoned with soy-based vegetable oil. No peanut oil or animal fat is used.

This is a well constructed bread pan, the cast iron is nice and the seasoning on it is good and "nonstick". However, I don't like the shape of it. It is a lot narrower at the bottom than my current bread pans, which result in all my recipes slightly overfilling it, and it being not as ideal for making sandwich bread because the loaf is tall but not very wide. It offers no advantage over my cheap aluminum pans that I could tell, so I'll be sticking to those. If you like the more narrow shape, then this is a good bread pan.

Solid little loaf pan! I've got 2 of these and decided to grind and sand down the insides to make them smooth and seasoned them up myself with crisco in the oven or on the BBQ outside. Now they are smooth on the inside to help with getting the food to slide right out. These things are indestructible! Thick walls and fairly deep makes them impossible to break. You can make some nice corn bread in these pans. Great price too on webstaurantstore.com
Cast iron what I love to use. This loaf pan is amazing! And it comes already seasoned and ready to use. I love making corn bread loaf in this pan. Comes out so tasty. Definitely recommend
I have been using cast iron cookware for decades. I grew up with it in fact. This oaf pan will make a beautiful loaf of bread, and it will last a lifetime if cared for properly. Love that it is pre-seasoned!
These are slightly smaller than the pans I normally use, and that works well for my smaller loaves of bread. The handles are large enough to grip with potholders. I just barely worked on the seasoning before using these--they were practically ready to go out of the box--no problems with sticking at all!
This is great for baking breads. It gives a nice crust to the bread. I tried corn bread and it stuck, but I think I needed to grease it better first.
I made banana bread in this loaf pan. It came out so nice, I could not stop eating. Love these Lodge cast iron products. Definitely recommend this to others.
My wife loves to cook banana bread. This cast iron pan cooks it perfect every time. With aluminum pans the middle section would always come out uncooked.
This is a great loaf pan for making bread. It is very heavy, well made and cleans up easily. The bread never sticks and the crust is amazing!!!
