My Baker and I use these for our baguettes and french breads. The aeration holes on the pan work great for crisp crust and, if you spray water inside your oven like I do to create steam, the holes in the pan allow that moisture to reach the bread as well.

I bought this pan to use making my gluten-free baguettes. The pan evenly bakes the baguettes and cools quickly after removal from the oven. The only thing that I don't like about this pan is that it does not fit on a standard size baking sheet pan. So it can make it cumbersome if you need to rotate it in your oven during cooking. But I am still giving it 5 stars because it does exactly what it is supposed to - bake PERFECT baguettes!

By mistake I did not look at the size of this pan. It is a commercial size and will not fit into a regular stove. So, luckily my husband is a precision metal worker and he transformed this well built, heavy duty baguette pan into 3 pans for me. This pan is built so well it held up to being cut into three pieces and redesigned and never did it bend out of shape. It didn't warp, it just stayed perfectly molded in it's original shape. I bought this to make sub-buns and now I have the perfect size to do just that, which is this pan cut into 3 even pieces....My sub-buns do not burn on the bottom using this pan and the loafs come out perfect...Highly recommend...
