Making fresh pasta noodles from scratch can be rather time-consuming, especially when working in a high-volume kitchen. Dry pasta will help to cut down on preparation time, ensuring a smooth and efficient service for your hungry patrons. This orzo pasta is made from durum wheat flour, as well as red bell pepper and spinach powders; the natural colors from red bell pepper and spinach brighten when cooked to provide visually appealing presentations that match your meal's great taste. To prepare an entire 2 lb. pack, bring 5 qt. of water and 2 oz. of vegetable oil (optional) to a boil. Stir in the orzo, reduce heat, and simmer covered for 10-12 minutes, or until desired texture is achieved. Remove from heat, drain excess liquid, and serve. Each 2 lb. pack will yield (22) 1/2 cup servings, or 132 servings per case. For best results, store in a cool and dry environment until ready to cook.
