Baking Sheet Sizes
There are five industry-standard baking sheet sizes.
- Full-Size = 18” x 26”
- 2/3 Size = 16” x 22”
- 1/2 Size = 13” x 18”
- 1/4 Size = 9 1/2” x 13”
- 1/8 Size = 6 1/2" x 9 1/2”
A baking sheet's size doesn't affect its capability. You can use each baking sheet size for baking, roasting, chilling, and decorating. However, the different quantities each size yields and the pan's compatibility with other kitchen appliances determines their helpfulness for different kitchen settings and food preparation tasks.
What Are Industry Standard Baking Sheet Sizes?
The foodservice industry has set standard baking sheet dimensions so its professionals can easily identify baking sheets. Most manufacturers label their baking sheets according to the industry’s standard-sizing, but each manufacturer’s baking sheet will vary slightly from the next.
It's not uncommon for two products labeled '12” baking sheet' from different manufacturers to have slightly different dimensions. You should check a baking sheet’s product description to find its exact dimensions.

Full-Size Sheet Pan
A full-size sheet pan's dimensions are 18” x 26”. You can fit one full-size sheet pan on each of your commercial oven’s shelves. Perfect for high-volume settings, full-size baking sheets are the most common sheet pan size in commercial settings. Full-size baking sheets are ideal for making large baked goods and sheet pan dinner items.

A 2/3 size sheet pan's dimensions are 16” x 22”. As the largest baking sheet that a standard 30” oven will accommodate, the 2/3 sheet pan size is ideal for home bakeries. While not as large as a full-size baking sheet, a 2/3 size baking sheet can hold a 25-pound turkey and up to three 9” pie dishes. They are an excellent tool for businesses without a full commercial oven.

They also slide perfectly into half-size convection ovens and fit comfortably in commercial dishwashers.

1/4 Size Sheet Pan
A 1/4 size sheet pan's dimensions are 9 1/2” x 13”. You can fit 4 quarter-size sheet pans in your standard commercial oven, making them the ideal baking sheet size for small-batch bakeries. You can use your quarter-size sheet pans with conveyor ovens, for individual portions, and as a space-saving option in limited capacity environments, making them an ideal food truck equipment option.
Because of their reduced size, quarter-size sheet pans are an easy-to-store solution. If you need to freeze or chill items, quarter-size sheet pans will fit more comfortably in chilling units than their larger counterparts. Similar in size to metal pizza plates, quarter-size sheet pans slide easily into most dual-purpose racks.

They also make excellent serving trays for counter service operations, BBQ restaurants, or any other foodservice establishments that require attractive, durable trays.

Baking Sheet vs Cookie Sheet
The difference between a baking sheet and a cookie sheet is baking sheets/sheet pans have raised edges on all four sides and cookie sheets do not. Most cookie sheets have a handling lip on one side, making it easy for bakers to slide their baked goods onto a cooling rack. While cookie sheets help bakers easily transfer cookies and other baked goods to cooling racks, you can use a baking sheet to make cookies if you don't have a cookie sheet on hand.
