I was in need of a good brisket trimming knife when I stumbled across this option from Mercer Culinary. Having been happy with the other knives that I've purchased in the past from Mercer Culinary I knew that this knife would be a great resource. Upon using it for the first time I had to wonder why I ever allowed myself to trim briskets with my ten inch chef's knife. This smaller knife makes things much safer and it grants you much better control in situations where you're trying to finely cut through meat. I will likely pick up a flexible version in the near future to help round out my knife collection.

This knife is a must have in any commercial kitchen. It is comfortable to hold and is very sharp. It cuts well and it doesn't need to be sharpened often, even with a lot of use. The price is amazing!
Easily one of my favorite knives to use outside of my chef's knife. I do a lot of poultry prep in the kitchen and it glides through joints pretty easily. Since the knife is slimmer, I can follow the cover of bones relatively easily without cutting the flesh of poultry unnecessarily.
