If you are looking for a great quality boning knife for your commercial kitchen, I would recommend this to you. The blade is firm and sharp. The curve allows you to easily remove all the meat off. The blade hardly ever needs to be sharpened. This is an excellent boning knife.

I use this 6" boning knife primarially for butchering. The curved blade is very efficient in removing large cuts of meat from the animals carcus, trimming, and cutting to size for packaging. The blade tapers down to a very thin tip that glides through meat with very little resistance. It also came from the factory with a very sharp edge. It seems to be of very high quality for its minimal cost.
