To debone a chicken, first you must cut out the backbone. Slice the keel bone and then crack it open. You can then remove the keel bone and cut your chicken into halves. Separate the thighs and breasts, and remove the chicken legs. Take off the wing tips, and separate the wings and breasts. Then, remove the rib bones and score the chicken legs. Scrape meat from the leg bones using a knife and slice the meat to remove the bone completely. Score the thighs, scrape the meat from the bones, and remove those bones completely, too.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

    Definitely a great value for a boning knife. Millennia line from Mercer Culinary is great for knives to throw around and take a moderate beating. Of course, the edge doesn't hold as well as some of their middle of the road models, but a quick swipes on the steel gets you there.
    This knife is better than I expected. It is extremely sharp and it fits comfortably in your hand. It is dishwasher safe and long lasting. The price is excellent.
    This knife came sharp as a razor. My chef did not think that a blade as inexpensive as this could perform this well. It did just as well as his 30 year old Henkel; and I can put it in the dishwasher. We cut a lot of chicken legs and wings and this blade does great on both.
    Ah, another knife that I use for the wrong purposes. I love this knife for cutting larger veggies. I don't like the giant blades, I have smaller hands so I don't feel like I have the control. This is just the right size to give me the precision for butternut squash and others larger veggies. Yes, I do use it for meat as well. I have had it over a year now and honestly I don't treat my knives with kid gloves. They go into the dishwasher (don't slap me!) after a year of such abuse they look great. I also love the ease of sharpening them. I will eventually purchase a few more knives from Webrestraunt as I have been happiest with them and I have had the "Status symbol" knives that are trendy now. They can't hold a candle in my book. Great Knife!!!!

    This Mercer knife is a perfect addition to our cutlery collection. The heavy duty blade does not flex when cutting and sharpening on an automatic sharpener is a breeze. We use the victorinox brand also and these are just as good.
    this is a very nice knife. cuts very nicely. it does not go dull quickly. very easy to use and very easy to clean worth the money.
