To debone a chicken, first you must cut out the backbone. Slice the keel bone and then crack it open. You can then remove the keel bone and cut your chicken into halves. Separate the thighs and breasts, and remove the chicken legs. Take off the wing tips, and separate the wings and breasts. Then, remove the rib bones and score the chicken legs. Scrape meat from the leg bones using a knife and slice the meat to remove the bone completely. Score the thighs, scrape the meat from the bones, and remove those bones completely, too.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

    Great stiff boning knife for the money. Sharp as a razor, and nicely shaped blade for boning a bird. I can only recommend it, especially at the price.
    The Mercer Millennia 6" stiff boning knife works wonders on deboning trout. The knife allows us to get a close cut so we remove all the bones without leaving a large chunk of the meat. We love the design ad how long the blade has remained sharp. A great buy!
    This knife works great to cut through small bones or to cut meat off the bones in tight areas. It is very sharp! I would buy it again!
    This knife is incredible. I used it to trim a tenderloin for beef wellington and it exceeded my expectation. This is a rigid knife. Some filleting requires a flexible blade. This would not work for that application, however, it is very good for tasks where a rigid boning knife is required.
    The Stiff Boning knife by Mercer: Quality- The Blade material is X30 Cr13 which is similar to 420J2. It is a very resistant metal and durable. Its edge retention is lower so it will need to be honed and sharpened more frequently ( you should be honing anyway so its not really a negative). The Handle feels very solid and is composed of 2 different materials Santoprene and Polypropylene. The rubber or Santoprene does like to attract lint and dirt so avoid paper towels or clothes that leave lint. Price: FANTASTIC, for the quality. Ease of use: Honing the knife is very easy and sharpening it should be easy as well since the steel is not as hard as other metals. The santoprene helps to keep the knife in your hand even when wet or oily so that is a plus as well. I do wish the steel was slightly better but otherwise this is a very good knife.
    The boning knife is one of my favorite knives to use. It is large enough to cut up a chicken and thin enough you can get between the joints and close to the bones. I am learning to de-bone a chicken and find it is so much easier with this type of knife. The blade is thin enough to get the job done with fewer cuts.
    Had a double beveled bonig knife prior to this knife. This knife has much better maneuverability and a much better edge. Try not to abuse it but it will definitely take out chicken ribs with no serious damage. Very happy I upgraded to this knife
    This is awesome for breaking down smaller cuts like lamb or chicken. Absolutely a great product and I would buy it time and again, yeah!
    This is a great sized boning knife for boning chickens and fileting small fish. I like that it's stiff so you can easy work with chicken.
