1. Heat chocolate to 45C until completely melted
2. Reduce temperature of chocolate and cool to 30C, just by agitation (no seed)
3. Once chocolate reaches 30C, add about 20 - 25% chocolate seed
4. Reduce temperature further to 27C
5. Once chocolate reaches 27C, bring chocolate back up to 30C
6. Work with chocolate between 29.5C - 30.5C
