This Ruby chocolate is the perfect compliment to fruit. Wonderful for dipped strawberries, which really enhances the berry undertones. Going to try some filled schoclates with this next. Gorgeous color very interesting taste it's like a slightly sour white chocolate and if you read the ingredients you see it's pretty much just white chocolate with citric acid but I made Italian meringue buttercream with this and customers really liked it the shtick

It tempers slightly different than a milk or dark chocolate, but not so much that it is difficult to use. It sets very quickly, and has a beautiful finish.
