Elk meat has a much milder flavor than venison, with none of the "gaminess" associated with deer, but a distinctive, savory richness that sets it apart. Plus, this elk meat is a nutritious addition to your menu! It's lower in fat and calories than beef, but higher in protein, offering a leaner, healthier alternative. Osso buco is a classic Italian dish that roughly translates to "bone with a hole" - so named for the marrow bone at the center of the cross-cut veal shanks that are traditionally used to prepare this dish. You can create a rustic, wild take on this Italian favorite by substituting these bone-in cross-cut elk shanks for veal when preparing osso buco! The shank meat offers rich, hearty flavor, while the buttery marrow inside the bone is a decadent treat for true gourmands. When served with polenta, risotto, or creamy mashed potatoes, this elk osso buco is a dish your patrons won't be able to get enough of! Its hearty flavor pairs well with full-bodied red wines like zinfandel, pinot noir, or sangiovese, or your can serve it with a crisp, dry cider for an autumnal flavor pairing.
To prepare this dish, preheat your oven to 350 degrees Fahrenheit and heat a cast iron dutch oven over medium-high heat.
