Moulard ducks, a cross between Pekin and Muscovy ducks, are bred and raised on the farm. Replicating the natural gorging process of this migratory waterfowl, a specialty hand-feeding process is utilized to produce the perfect high-quality duck for foie gras. This luxurious delicacy is then warm-harvested, inspected for quality to check for consistency and texture and gently poached to fully cook it for fresh-tasting foie gras year round.
