Though this cut comes from a hard-working muscle with a significant amount of dense connective tissue, low-and-slow cooking methods like braising and smoking will reward you with exquisitely tender meat with unbeatable flavor! When cooking this roast, keep in mind that venison is leaner than other red meats, so you may need to add more fat or monitor the meat closely to avoid overcooking. Venison pairs well with spicy, autumnal flavors like mint, sage, rosemary, star anise, allspice, and clove. Its earthy flavor is complemented by tart fruits like quince and cherry and it stands up well to full-bodied red wines and dry ciders.
