I absolutely love this cut of Bison. Teres Major is often considered the "Poor Man's Tenderloin" on beef products due to the smaller size, higher fat content, and slightly more tough texture than traditional tenderloin. However, since Bison is naturally less fatty and produces wider muscle fibers than cattle, this Teres Major turns out amazing. It is gamey compared to traditional beef. WORD OF WARNING: REMOVE THE SILVERSKIN AND MEMBRANE BEFORE COOKING. If cooked with silverskin and membrane on, the meat becomes tough and very gamey and has a coppery-iron mouth feel. Removing the membrane and silverskin eliminates this issue. This is a fantastic product and I buy one case every three to four months to impress friend's at dinner parties.
