This gyro meat can be broiled or cooked on a flat top grill. To broil, heat the meat slices on a charcoal grill for 3 minutes before turning and heating the second side for 2 minutes. For flat top grilling, preheat the grill to 350 degrees Fahrenheit and place 0.5 oz. of oil per gyro slice to prevent sticking. Then, cook the meat for 3 minutes on one side before turning and cooking for 2 more minutes. To ensure proper food safety, cook the meat from frozen to an internal temperature of 165 degrees Fahrenheit.

These gyro meat slices are preserved through the IQF, individual quick freezing process. This process takes only a few minutes to freeze the food, and this short freeze time prevents ice crystals from forming and watering down your product and also helps the food keep its shape, color, and texture for much longer than typical freezing.
