To produce the tastiest, healthiest product, the raising of the ducks is carefully controlled at each step of the way. Hand fed for 10 to 11 days, the Moulard ducks are given locally-grown, hormone- and antibiotic-free corn twice daily. This luxurious delicacy is then warm-harvested, sliced by hand from the main lobe, and individually flash frozen to ensure it retains its freshness and the cellular structure remains intact for fresh-tasting foie gras year round. Flavorful as-is, these foie gras slices can be served with a sprinkle of sea salt, skewered with a cube of toasted brioche for a simple and tasty passed hors d'oeuvres.
