Offer your guests a true taste of the wild American West by serving this Kinikin Processing Rocky Mountain elk tenderloin! Elk, also known as "wapiti," is one of the most prized game meats, renowned for its clean, slightly sweet, and rich flavor that's remarkably similar to beef. Elk meat has a much milder flavor than venison, with none of the "gaminess" associated with deer, but a distinctive, savory richness that sets it apart. Plus, this elk meat is a nutritious addition to your menu! It's lower in fat and calories than beef, but higher in protein, offering a leaner, healthier alternative. It's also packed with iron, B vitamins, and other essential nutrients, making it a great choice for patrons who are trying to eat healthy! This meat comes from animals that are raised with care by expert Colorado ranchers. These elk spend most of their life grazing on the verdant pastures of western Colorado, and are finished on grain for consistent flavor. Unlike other game meat distributors, Kinikin never imports their elk; you can rest assured that you're serving your customers the finest 100% American Rocky Mountain elk! Plus, their meats are never produced with antibiotics, growth hormones, or steroids, and they use only humane slaughtering and processing methods to ensure the finest quality meat for your patrons.

Like beef tenderloin, elk tenderloin is one of the most highly-prized cuts on the animal. Because the tenderloin is not a weight-bearing muscle, this is the leanest and tenderest cut of elk available, boasting a delicate flavor and a melt-in-your-mouth texture. Sometimes called "elk filet mignon," this muscle makes up less than 2% of the total carcass, meaning that it's an exclusive addition to your menu! This delicious meat is an approachable introduction to the world of game meats for the uninitiated, and a milder option for those with sensitive palates. Thanks to its lack of dense connective tissue, this elk tenderloin is perfect for hot and fast cooking methods like grilling, searing, or baking. Because its flavor is more mild than other "gamier" cuts, this tenderloin doesn't even need to be marinated before cooking; if you do choose to marinate it, a short soak of 3-4 hours should be sufficient to complement its pure flavor! When cooking your elk tenderloin, keep in mind that it is very lean, so you may need to add extra fat during the cooking process and monitor its temperature closely to avoid overcooking. Try grilling an elk tenderloin over medium-high heat for 10-12 minutes, turning once during cooking, until it reaches an internal temperature of 145-150 degrees Fahrenheit for medium-rare perfection! Remember to allow the meat to rest for at least 5 minutes before carving. Try serving a whole elk tenderloin for a showstopping holiday meal, or cut it into individual filets to present a gourmet entree that your guests are sure to remember!

Nestled in the soaring mountains of western Colorado, the rural town of Montrose is a picture-perfect location for ranchers to run herds of cattle and elk. In the countless acres of prime grazing land that surround the town, animals roam lush mountain pastures and consume a varied diet, creating some of the finest meats money can buy! In 2003, Kinikin Processing was founded with the mission of connecting Montrose ranchers with consumers by offering delicious, locally-sourced meats at reasonable prices. What began as a small operation producing elk jerky and meat snack sticks quickly grew into a local favorite spot for smoked meats, butchery, and processing! This family-owned and -operated company is proud to offer hand-cut meats, specialty elk products, and expertly dry-aged beef, all while supporting their local community and helping farmers prosper. Bring the taste of the Rockies to your tables with all-American meat products from Kinikin Processing!
