Now, use your hand to find the keel or breast bone. Use that as a guide to take the tip of your knife and make shallow cuts toward the back of the bird. While gently supporting the breast, turn your knife and use a short up-and-down motion along the wish bone. Using the tip of your knife, gently remove the meat from the ribs, letting it fall away in short strokes. Just follow the form down and around the wing.
