Welcome to Vollrath University. I'm Chef Rich, and we're here today to talk about cleaning the Redco manual food processors. Generally speaking from all of these products, a couple of things. One, always clean them as close to the time you're finished using them as possible. The less time the product has to dry on the unit, the easier it's going to be to clean. Things like the brushes, the types that we supply or one of your own, and hot, soapy water and a good, clean towel go a long way to cleaning all of these products. Dishwashers, with their harsh chemicals, can pit any of the aluminum pieces. There some pieces on these that we'll address later that can go through a dishwasher, but generally speaking, anything that we have here that's the aluminum - probably don't want to put that through a dishwasher. Okay, so let's talk about the Redco units then with the removable, thermoset blade assembles. All of these units here, the Redco 5.0, the 3.5, and the InstaSlice, all use the thermoset blade assembly, which is really nice. These blade assemblies pop right out and are easy to clean. Now, these can go through a dishwasher. They have stainless steel blades, so they're dishwasher safe, and they come out very easily from any of the units. If you don't have a dishwasher or you want to use something like a stiff bristle brush - always from the backside; never from the sharp side... keeping your hands away from the sharp side and the brush doesn't dull the blades a little bit. I think one of the most important things when you're cleaning these products is to never put the aluminum parts through the dishwasher. For that, I recommend just imply a nice, damp towel with some soap on it. Warm water goes a long way to clean things. Again, we can always use our brush if we need to get inside the fingers in the pusher plates or the pusher heads on the 5.0 units, or any stubborn stains. Again, it's always best to do these things as soon as you can right after using the product. That's the InstaSlice with the 5.0s and 3.5s. Another safety feature - remove the pusher heads. Don't try to keep the pusher heads in place and take the blade assemblies off, because if you have your hand here, it's unsafe. You always want to remove this and simply pop the assemblies out. And now they are dishwasher safe. Clean the base with hot, soapy water - never through the dishwasher. Reassemble the product when you're finished. Again now, the blade assemblies always have a key somewhere in it that only allows it to be put in the correct way, so you don't have to worry about putting the blades in right. Back in place... secure firmly. And anything that pivots or moves or slides - petrol gel. A little bit of petrol gel on the uprights will just keep those moving very easily and safely so you don't have to use excess force. It's very simple. Always keep safety in mind... never through the dishwasher... hot, soapy water and a good brush go a long way.

Welcome to Vollrath University. I’m Chef Rich, and today we’re here to talk to you about the Redco 5.0 unit. This manual processor can do a multitude of different things. It’s probably our most versatile piece, because with this piece you can dice, slice, wedge, and core. So for items like peppers, onions, zucchini, soft vegetables like squash and cucumber, and celery all dice and slice very accurately. You get a consistent result each and every time. And for items like lemons and limes, apples and oranges, pears- there we can do the wedging and coring, if we want to core that product as well. So with this one piece of equipment, we can perform all these different tasks. The blade of changing out on this unit- as I said we have these four different blades; it’s very simple to change them out. On the back you just want to loosen up this nut, pop out the blade assembly, and it’s that easy. Notice the blade assembly: thermsoset plastic, the blades are permanently attached, so there isn’t any screws or blades to attach to this. And it’s dishwasher safe. Again, very easy to replace blades in the 5.0 unit. And then how about this last feature I want to point out to you here, an six inch deep, sixth size food pan slides right underneath the unit so when we’re prepping product, right into the pan. How convenient is that? Our competitors you can’t do that with. Talk about the construction. Notice this unit is diecast, a nice smooth finish, easy to clean. Some of the sandcast units out there, a little bit bumpier finish, not as easy to clean. The sled design on the leg- that’s for strength. If we were to drop this unit, these are always going to stay straight so we won’t get that wobble, a much more sturdy design. And even the uprights are much easier to replace should you ever need to replace these. Let’s say the unit gets dropped and these get bent. On the bottom there’s simply a nut, you loosen it out, change out the upright, tighten it back up. Our competitors, you have to tap out a little pressure pin, and that’s not always so easy to do- take my word for it. So that’s the Redco 5.0. Let me show you how this unit works. Also after cutting all these fruits and vegetables , the slide rods are made smooth, if they should ever get a little tacky or gummy, never vegetable oil, we recommend petrol gel, it’s a product we sell, a little bit on each one, right back to normal. So there you have it, the 5.0, what a versatile piece of equipment it is. Remember we dice, we can slice, we can wedge, and we can core all from this one piece of equipment. Okay, remember this is speed- much faster than we could do with a knife or other traditional means. Savings of labor, we can have those less experienced workers provide these consistent results each and every time. And also take advantage of locally grown, sourced fruits and vegetables. Organic, much better processed here on site versus somewhere else where they have to use chemicals to prevent the oxidation. Remember my dad always said fresh is best.     foods blades Slicer carrots pusher head blade block pieces aligned

    I liked the fact that the Vollrath Vegetable Slicer is made in America, thought that was worth the extra money. The product does a great job with certain foods only. There were no instructions in the box that told you what foods you can slice and what foods not to slice. I used it first on zucchini, peppers, onions, and tomatoes, worked great. Next I tried potatoes, sliced nice with the exception of the pieces of black plastic that came off of the pusher head block that the blades scrap. Not the end of the world, just have to wash the plastic off of your food. Next I tried carrots, big, big, mistake. Carrots must be one of those foods you should not use in the slicer. Slicer had a very hard time cutting through the carrots. The carrots also must have damage the blades because the next time I used the slicer to cut potatoes, one of the blades must of gotten out of alignment with the pusher block and is now bent side ways. Blade assembly is now worthless. This all took place in the first two weeks I owned it. Now I have to buy a new pusher head block and blade assembly if I want to use it. It would of been nice if there were instructions that told what foods will damage the blades.

    We have ordered this item and used to dice onions and carrots. We aligned the blade and pusher head before use. After some time we recognized that the pusher head started to crack in small pieces and the black pieces started to contaminate the food product. We get in touch with webrestaurant store and after they contacted the manufacturer we were told that we need to align it for this not to happen. We were refused for a return and it is funny but we were requested to buy new parts for this unit. I WILL NEVER USE THIS PRODUCT and USE VOLLRATH AGAIN. BE CAREFUL. DON'T GET RIPPED OFF. SAVE YOUR MONEY.
