Suggested Recipe: Chocolate Cashew Avocado Mousse
2 large ripe Hass avocados
1/4 cup cashew milk
1/2 cup semi-sweet chocolate
1 tsp. instant espresso
1 tsp. vanilla extract
1-3 tbsp. agave nectar
Pinch of salt
Fresh raspberries

In a double boiler, gently heat cashew milk until warm. Add instant espresso and stir until dissolved. Add semi-sweet chocolate to cashew milk and stir until melted and smooth. Remove melted chocolate from heat and let sit until just warm. Slice avocados in half, remove pits, and scoop into a food processor along with chocolate mixture, vanilla extract, and salt. Process mixture until smooth, adding small amounts of agave nectar until mixture is at desired sweetness. Spoon into serving dishes and refrigerate for 2 hours overnight. Add raspberries, serve, and enjoy!
