CARROT CAKE OVERNIGHT OATS

3/4 cup Elmhurst unsweetened walnut milk
1/2 cup mashed sweet potatoes
1/2 cup carrots, grated
1/2 tsp. apple pie spice
1/4 tsp. cinnamon
1/4 tsp. salt
1 cup steel cut oats
2 tbsp. agave syrup
1/4 cup vegan vanilla protein powder

Combine all ingredients in a medium mixing bowl until well combined. Divide mixture into your 2 small mason jars. Cover and refrigerate overnight. Once the oats have soften and absorbed all the liquid, top with chopped nuts, cinnamon, and agave syrup. Serve cold or microwave for 30-60 seconds to enjoy warm.
