I was looking for a low-carb, low-fat, shelf-stable replacement for dairy milk. I tried several unsweetened brands (usually soy) and liked Silk the best overall. I mostly use it in my espresso, but it makes a passable bechamel/cheese sauce. It reacts to cooking differently from dairy milk. I'm still working to find a custard recipe that doesn't go runny. Cornbread and cake seem to come out a bit dry. In coffee, I mix it with another non-dairy "milk". In my taste testing, I found another brand (Webstaurant doesn't carry) that didn't taste all that good, but felt very creamy. Combining the 2 gives me the best of both. (Silk's manufacturer offers a barista-style "milk", but it has more carbs so I haven't tried it.) I have come to depend on Webstaurant as my Silk source. In buying by the case, I can stock up and for a much lower per-carton price than the grocery store. I've always received shipments in plenty of time ahead of the expiration date.
