Suggested Recipe: Coconut Chickpea Soup
4 cups vegetable broth
1 1/2 cups Andre Prost unsweetened coconut milk
2 cups drained chickpeas
1 cup spinach
1 medium size chopped onion
2 minced garlic cloves
2 tbsp. olive oil
1 tbsp. red curry paste
1 tsp. fresh minced ginger
Fresh chopped cilantro
Lime wedge
Salt and pepper to taste
In a pot, saute onion and garlic in olive oil over medium-high heat until softened. Add red curry paste and ginger, and stir for about a minute. Pour in vegetable broth, coconut milk, and chickpeas, and simmer for 15-20 minutes. Season with salt and pepper to taste and add spinach shortly before serving to wilt. Serve with a lime wedge and chopped cilantro to garnish.
