If you are looking for a high quality knife that will last a long time, I would say that this is the knife for you. It comes sharp and it doesn't need to be sharpened a lot. It is comfortable to hold and the it cuts well, leaving no waste. This is great for color coding in commercial kitchens.
I FREAKING LOVE THESE KNIVES!!!!! I have had so many knives over the past 25 years and these are the best. Don't let the price fool you. I've had my set for 7 years now and they still look and cut like new. Holds an edge and very lightweight

This is a Great boning knive, The profesional chef who used ones, was delighted with the soft cut. The handle is soft and non-slip grip. For me lovely colour which make a real diference between other brands. I'll buy the chef knive in the same brand in the same lime green color
We use this to do a lot of filleting and when we are really trying to get that super sharp cut, it works great for the tight spots on meat, especially chicken.
I bought this boning knife after owning the Victorinox brand. The two knives have almost an identical feel and weight. The curved blade lends itself to filleting out grouper and other large fish rather than trout. Handle grip is a little better in my opinion than the Fibrox, as trhe Fibrox seems to slip in a wet latex glove.
I love this particular boning knife for breaking down whole chickens!! Easy to handle and sharp right out of the box!! Lightweight design with unique handle!!!
