Mercer Culinary M13914 Millennia® 14" Granton Edge Slicer Knife

Indescribably sharp and beautifully balanced. This is an astonishingly good knife, especially for the money. I've never used a knife that holds its edge as well as this one does. One really doesn't have to apply pressure when slicing meet, for example. The weight of the knife allows it to effortless glide right through the meat under its own weight. Yes, it is stamped, but the balance is very, very good. The handle material is very comfortable to hold; soft and very "grippy" even when wet. One minor gripe is with the ergonomics of the handle where it meets the blade: it is physically wider than the rest of the handle. I believe that this is to give the user a "fitted" area in which to place the thumb and index finger, but this makes it difficult to "pinch" the blade for control (as most professionals do).

Good knife. I use it for slicing brisket on my food truck. I have a much more expensive slicer (about 3 times the cost of this one) but found the handle to gets slick after slicing for a while. This handle has a better shape making it much easier to grip with greasy gloves.

This Knife is amazing for cutting. It's nice and long but cuts super sharp. Very great purchase.

Super sharp and keeps its edge well. While it's too large to be practical for many purposes, it really helps with carving large meats like brisket or turkey breast.

I can say for certain that this slicing knife was the absolute standout of the bunch. The edge is incredibly sharp right out of the package. The handle incredibly comfortable and affords you an element of control that is unrivaled by any of the other slicing knife options. Love this knife! Quickly cuts watermelon and made it easy for me to use (super sharp so a little nervous using his but was careful). I hesitated purchasing the 11" knife because it was so much cheaper and you know what they say, you get what you pay for, but after reading the reviews I made the purchase and glad I did! It cuts like butter! Have used it several times but this knife also works well on bread, brisket and other foods. HIGHLY recommended!

This is the longest carving blade that I've ever owned! It's a great knife and the granton edge is perfect for smoked beef brisket. My dad was an old time butcher who taught and required me to properly slice meat. It does the job and is a great tool. What I really like is being able to display some showmanship in my slicing skills. Buy this knife, only if you know how to cut and slice meat. It's not amateurs. Don't forget the blade guard.

Our local grocery store has a truckload sale a 2-3 times per year. You can buy butcher packs at that time. We this knife I can easily cut perfect New York strip steaks in one pass. I do wish there was a knife guard that would cover the whole blade. It is wickedly sharp.

Mercer knives have been in a staple in my knife kit for some time now. They tend to stay sharp and are durable. This slices is no exception to that. I love the large handle (I have big hands) and the long blade makes it easier to make single motion slices on prime cuts of meat like my smoked briskets.

This is a very good inexpensive slicing knife. The stamped blade was sharp out of the box, and very easy to resharpen. It's just long enough to get a nice, even slice without having to "saw". The width of the blade and the rounded tip help to make even, consistent slices, and the handle is comfortable and secure. An inexpensive knife that does what it was designed to do.

These are a must buy for any one who offers carving stations for catering. It's super comfortable and glides through pork, beef, chicken, turkey alike. It's a definite winner.

A monster knife. A sharp monster knife that is. I really like how the edge is rounded so when slicing the knife does not get caught. It will last a awhile for my needs.

We purchased a couple of these knives for carving proteins better then the chef's knives we had on hand. Mercer is a really good, trusted brand of knives and upon receiving these, we could see and feel the quality of knife. When we used them, they didn't disappoint.

Great knife at a fantastic price. Arrives extremely sharp. Fits in your hand well and cuts ribs like they were butter. Perfect size, too. I may give these as gifts - they're that good.

Great carving knife! We cook and carve about 120 pounds of prime rib a week, and this guy has held it's edge well. Nice and sharp!
