At first glance I though this was a wildly over designed knife but it has become my favorite go-to for just about everything in kitchen. It is one of the sharpest knives that I have ever used. It is quite amazing, even my 13 year old daughter was comfortable using it. My large hands can grip the contoured handle with ease. It has a great feel and grips with greasy or oily hands. You must treat this knife with respect, it is razor sharp and the pointy tip can prick you if you are not paying attention. It is both a versatile tool for the kitchen and a great value at the same time. I would have probably given it 5 stars if the handle was in all black to easily blend with my other knife arsenal.
This knife is no joke. This is a commercial quality knife that will last a long time and it does an absolutely fantastic job of deboning quickly with no waste. It is very durable and dishwasher safe.

Great Mercer curved boning knife. What we really like about their knife line is cross-contamination. The knife stays put in the proper station and you don't have to worry about cutting meat and that knife used for cutting vegs.

I purchased this boning knife along with the Mercer chef's knife originally for culinary school. Not only were my classmates impressed but so were my teachers. Sometime later it's still a staple knife in my kitchen...just butterflied a pork loin and it came out perfect. For the great price.. can't beat it!
A good solid boning knife, at great price. I can carve chickens all day with this comfortably. It sharpens easily and is comfortable to grip and does not slip even when wet. Highly recommend.
