No, hand washing with soapy water and sanitizer solution is always recommended. When placed in a dishwasher, the process will often rust and cause damage to the edges of the blade.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

    I've been using this santoku knife for some time now. I use it daily in the kitchen. It's thin just like the other millenia knives from mercer. It is easy to sharp but does not hold it's edge for long.
    I bought a couple of these knifes for my restaurant. They are very high quality and the blade doesn't get dull. They were totally worth the price!
    Perfect size for our restaurant. I always order these knives due to their comfortable handle and durability. They are great for cutting everything from bread to desserts to vegetables. I recommend these for all food service kitchens.
    This is a very good slicing knife especially if you want something to be cut thin. Mercer produces some excellent knifes we use them daily and they haven’t failed to get the job done. They are comfortable and sharp would definitely recommend this and the others to anyone.
    I absolutely love the reliability and quality of this knife. It really makes my day easier in my kitchen and it saves me a lot of time. I would recommend it.
    I usually don't like Santoku knives, but decided to try this one. Happily surprised that I really like it. I still prefer my chef knife for speed chopping, but for dissecting large veggies/fruit, this was really great. The curved edge of the chef knife is unbeatable for rhythm, but the flat edge of this knife gives precision. I have both, and now I have the proper tool for every job.
    This Mercer knife has a nice, sharp blade. It sharpens up really nice and has been used many, many times. It washes easily as well.

    It's a pretty good knife! Although, I prefer a knife that feels a bit more sturdy. I use this one for cutting brownies & biscotti, but I prefer the Genesis 7" model for both of those tasks. That said, this here still is a great knife!

    Our vegetable prep cook loves this knife. It's held it's edge for about 6 months before it needed sharpening. It's thin and light weight. It's our go to knife for small vegetables.

    Comes very sharp. Nice thin blade and lightweight design makes it easy to use and make paper thin cuts. Haven't owned it long enough to know about the durability but for the price you can't beat it.
    Great blade at a great price, this along with the 10" Chefs Knives are the preferred blade in our kitchen. We serve a lot of raw or seared tuna and this is where this knife really shines with its Granton edge. Will be purchasing more

    They are very sharp and very nice knives. Cuts though a rutabaga with no problem, will buy them again next time I need new knives.
    This Mercer knife lives up the the Mercer name. It is sturdy and keeps its edge. Easy to sharpen when needed. Holds up well under heavy use.

    Love love love this knife for chopping vegetables! Veggies don't stick to the sides of the knife as easily. Love that it's not so thick. Very sharp and nice hefty handle.
    Part of hiring on with us is we do not keep kitchen knives. A couple of kids I have hired have panicked when I tell them but we have started buying these for them to call their own. I personally do not care for them, they are light weight, oddly balanced and just feel odd, but as a starter knife they are well worth it. Plus it gives the beginners a sense of pride to have their own knives and it is fun to watch them start to think about trading up.
    I like these knives so much I keep buying them and giving them to friends and family. I like the soft handle and the angle of the blade is nice. The only oddity is the blade doesn't terminate in the handle, but its not really a problem.
    This is a nice mercer, good quality blade too. mercer is a great company and well known in terms of quality, not as good though if you are advanced in knife skills
