Mercer Millennia chef knives are available with a standard 8" blade, a wide 8" blade, a standard 9" blade, a standard 10" blade, a wide 10" blade, or a standard 12" blade. They're all NSF Listed for easy cleaning and sanitation.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

    These Mercer knives are hands-down the best value of any knives I have owned over the years. They take and hold an edge very well and are light and comfortable to hold.
    Was going to buy an expensive santoku when I just stumble across this knife. I though, what the heck, so many people loved this knife I am going to give it a shot. The old saw of "you get what you pay for" doesn't apply in this case. Sharp from the get go and with an occaisional touch up on a very fine whetstone it maintains a shaving edge. If this is the bottom of the Mercer line I can't imagine what the other knives are like. I know the handles get fancier but not sure about the actual blades. I love what I have an join the hundreds of reviewers who liked this knife.

    I absolutely love this 12 inch Millennia chef knife, it's capable of doing any job in the kitchen I call it the Beast light weight but sturdy great for veggies or watermelon, carving meats the list goes on and on.     This is a bargain for the price. This knife is sharp and well-constructed. The handle is non-slip and ergonomically shaped. It is a great tool when you need to cut large items.

    This is a large knife. My wife was impressed with it's size and showed it off to a group of guests we had in out home when it arrived. It's actually the perfect size to match my favorite cutting board. I find that the knife has excellent balance with a comfortable grip and keeps it's edge well. Being large has it's advantages. It also makes a decent board knife useful for collecting the dismembered meat and produce and delivering it to the pot.
    This is a very large knife. I made the mistake of ordering the wrong size. I decided to keep it anyway because I always fight with larger squash and meat and this seems to get the job done a lot easier. It proves a mistake can turn out to be an advantage.
    This brand of knife has proven to be of very acceptable quality and for the price very unbeatable. We've had them for about 8 months and love them.
    Price for quality is outstanding. This is the knife for cleaving monster meat and is suitable for threatening Godzilla. Grip and shape of the tang allow for quick dismissing of cooked or raw primal cuts. Not the most frequently used of my carving knives but it performs as well as any of them when I have to deploy the heavyweight blades. Holds edge well. Happy that I bought it. Recommended. I am a casual cook.
    These knives are sharp, sturdy and well balanced. This economical alternative appears that it will hold up well to heavy commercial kitchen use, although we have only had them in service for a short while.
    What a wonderful knife! We have replaced our inexpensive and cheap sysco brand knives with these affordable knives! They are sharp and stay sharper longer! Comfortable too!!
