Sharp, durable, and comfortable to use, Mercer Millennia chef knives are some of the best tools for a commercial kitchen. These knives feature carbon steel blades with a durable edge that stays sharp as it slices, dices, cuts, minces, and more. The handle is made out of Santoprene and its no-slip grip gives your chef maximum control. Mercer Millennia chef knives are available with a standard 8" blade, a wide 8" blade, a standard 9" blade, a standard 10" blade, a wide 10" blade, or a standard 12" blade. They're all NSF Listed for easy cleaning and sanitation.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

    This is truly a wonderful knife and unbeatable for the price. It is very heavy and keeps a great edge. Worth every penny. The handle is very comfortable
    This very sharp knife just doesn't care what it's cutting. Heavy thick blade doesn't falter. Hint: Don't put your hand between the blade and what you're cutting. Product works very well as intended as well as many alternative uses I'm sure.
    Nice, large knife, especially for the price. Just like other Mercer's, it keeps its edge. This one has a very thick body to it, making it heavy and stiff. Great for splitting chickens, melons, etc..
    Folks, this knife is solid!! I mean, this knife is solid!! It is heavy duty, and heavy. Heavier than normal, but the extra weight does help when cutting skirt steak, or similar. This is a 10" extra wide chef knife, may not be for everybody, but if you cut 7-10" wide skirt steaks, all day like we do... the extra wide blade comes in handy. The fact that it is extra wide helps with safety as your fingers are so far away from the blade (even if you wear butcher gloves) that risk of cutting your finger off drops dramatically. Believe me, we hire young college kids with zero experience... no accidents folks.

    This Mercer millennia wide chefs knife is an around knife capable of doing anything in the kitchen from veggies to cutting up whole chickens. Excellent price from webstaurant.
    I have had this knife for over two years now and have since forsaken a few expensive japanese and German knives in favor of this one. As a home chef for a family of 7 (plus frequent visitors), I have probably used it 360 days a year for the past two years and can not recommmend it more. The blade has a thick, heavy spine that gives weight and balance, but tapers to very thin cheeks nearer the blade edge making "see through" slices of tomato, shallot, etc. a breeze. It has no bolster which I have come to prefer, and a very well shaped and practical non-slip grip. I was worried that it would wear, but it still looks and feels brand new. I love the length and weight for larger squashes and mellons, but it is just as useful for dicing mirepoix and scooping to transfer with the large, wide blade surface. I sharpen knives regularly, and this knife is easy to keep sharp with regular steeling and and ocasional swipe on the stone. It doesn't hold it's edge nearly as long as an expensive Japanese knife, but I can sharpen it so incredibly quickly and effortlessly, even with a cheap stone, that it isn't a problem. I expect this knife to last forever, and would replace it at four times the cost. Read Less Read More

    This knife is perfect for cutting larger items. It comes sharp right out of the package and stays sharp for a long time. It is made well and will last a long time.

    Big fan of larger knives like this. Gives the extra leverage needed when cutting through harder surfaces such as bone. Sharpens well. Strong steel. Design of handle makes it easy to grip and use.
    This knife is durable and heavy. It has a wide spine and a sharp blade. If you are doing heavy duty work or have giant hands this is great.
    I bought this knife for my husband since he is a bit rough on my pricey japanese knives and prefers a large, heavy blade. And since it was a very reasonable price I would gladly purchase it again if he beats this one up too. It is very heavy, in a good way, considering the low cost. It dulls easily but is good again after a touch up with a steel. I like it for cutting crisp pizza crusts and breaking down hard veggies like sweet potatoes and winter squash. Not comparable to expensive, high quality, but a fine knife for work or home use. Good knife for a beginner who is tall, as well as tiny women who like a heavy blade to put a little extra momentum in chopping tasks.

    I ordered the m18010 10" wide blade the same time I ordered the 8" wide blade ... I love it just like the smaller one. The wide blade is great for all types of cutting and chopping and the balance is great! These are two of the best knives I've bought in a long time . You won't be disappointed.

    This is a good quality heavy knife, it's sharp too.
