Mercer: How to Clean and Store Knives

Watch this video to learn how to clean and store knives.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

    Very wide chef knife. Smooth-cutting chef knife. Very sharp. Has extra heft to help power through the job, even on tougher cuts. We were worried the rubber-type grip handle would be cheesy or cheap, but it is actually really nice, and very helpful to prevent slips. Also great for use to scoop up what you've cut to quickly dump it in a pan.

    Very nice knife for the price. I love the extra wide blade (great for picking up cut items on the knife) and the fact that this knife is very sharp. Not sure how long it will hold an edge but the blade looks very well made so I expect it will stay sharp with minimal maintenance.

    I really like this Chef Knife. I have knifes in my collection from very well knows and expensive brands and this compares in quality. I really like the rubberized handle. It is very easy to handle this knife due to the comfort of the handle.

    Purchased this knife because of it's 2 knife angles and that it is half as wide again as a standard 8" chef blade. The wide blade made it so easy to use the knife along with my hand to get everything off the cutting board and into the pot. It's my go to for big root veggies and hard squash. It's my first Mercer and the blade shaved the hair off my arm right out of the box. It holds it's edge great and the handle can't be beat for comfort and washability.

    Amazing 8 inch wide chef knife I think this manufacture is the only one that we use and I restaurant. This company offers a large selection of my eaves that include different colored handles. The blades are always sharp and remain sharp. The price is always very compatible

    One of the very best chef knives i havenever owned. My ultimate go to knife for everything. For the price its awesome. Sharp enough to shave the hair off your arm straight out of the box. I love this knife. Its easy to use. Feels good in the hand and gets the job done. Good for everyday use. I use it for quite literally everything. Very well made.

    This was my first Mercer knife. It came sharp right out of the package. The wide blade has a different feel then a standard blade. The weight makes chopping effortless. The blade works well for a quick dice on onions. I cut both raw and cooked chicken with ease. I will be buying more Mercer knives in the future..

    This is my first wide blade chefs knife. I'm used to the narrower blades but this one seems to do just fine. I do a lot of chopping and mincing and this baby can get it done. I'm just a home cook but I use these knives all the time. The handle is very comfortable In my hand and the weight In all has good feel. I think I need another one. Good product

    the mercer m18000 wide blade knife is great! It's well balanced and the weight of the blade allows you to cut through even the hardest of cabbage heads with ease. No slipping or sliding off the item. The blade is sharp, the handle has a goo and positive feel and the price was right. I'd buy more but I need to find a place to store them

    Highly satisfactory basic chef's tool. While the knife was only recently received, and the durability is unknown, the workmanship, fit, and finish are excellent, and give every indication of a long service life. The knife as received is razor sharp across the entire blade from tip to heel by the paper test, and is ready to use. It is somewhat heavier than I expected, about like the premium forged chefs knives, but this has proven to be a plus in that the weight of the knife assists in many tasks. The lack of a bolster should be a plus when sharpening, and its lack is not noticeable in use. The curve of the blade has proven to be ideal for my particular dicing style, and the blade is thin enough to allow easy horizontal cuts for onion dicing. The handle is a good fit (I have small hands and wear a small mens' size glove), and the top edges of the blade are not sharp allowing a comfortable “pinch” grip. The wide blade provides additional knuckle clearance, and is helpful in transferring product from the cutting board, and seems to make bell pepper prep easier. Be sure to buy the Mercer edge guard unless your knives are always kept in a block or on a magnetic holder. Not a knife to be left in a drawer – bad for the knife and bad for the person reaching in the drawer. Unka' George – a highly satisfied WEBstaurant customer

    A good sharp knife. Holds its edge very well, easy to clean easy to sharpen. I especially like a blade heavy knife and this is it, I hold the blade when I cut and with that extra wide front it makes cutting easier, faster and more controlled.

    This is really an all purpose knife! Great for prepping vegetables, butchering chickens and even breaking down freshly cooked lobsters! Very sharp and easy to keep it that way!!
