Today we're going to show you how to season cooking pans. Pan seasoning is essential to any food service operation, as it keeps your pans from rusting and your food from sticking to the pans. Seasoning cooking pans saves you time and money. We'll show you how to season five different types of cooking pans in this video. A cast iron skillet, a carbon steel fry pan, a carbon steel wok, a tin-plated pan, and a hard coat aluminum pan.

How to Season a Pan

For a carbon steel pan, start by washing, rinsing, and drying the pan. Heat the pan on your range on medium to high heat, then add shortening to the pan. Use a clean dry towel to spread the shortening around the interior of the pan, creating an even coat. Remove the pan from the heat, wipe out the excess shortening and let it cool. You can repeat this process up to 3 more times. For a cast iron skillet, preheat your oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil and set aside. Wash, rinse, and dry your skillet. Place the skillet in the oven for 15 minutes. Remove and coat the entire skillet with shortening, inside and out. Place the skillet in the oven for 45 minutes with the baking pan on a rack below it to catch any mess. You can repeat this process up to three more times.

What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
My item arrived coated with a thin layer of oil. What is this oil for, and is it ready for immediate use?
Some carbon steel pans and woks are shipped with a protective oil coating from the factory to prevent them from rusting before their first use. They must be thoroughly washed with warm soapy water to remove all traces of the oil, and then properly seasoned before use.

    For the price this pan can't be beat. No, it's not De Buyer quality and it doesn't have a riveted handle but it makes up for it with very good quality steel. This pan seasoned to a mirror finish and rivals my teflon pans for non-stick cooking.

    These pans are fantastic. They heat very fast and evenly and are also easy to clean. They can rust quickly, however, so we oil them after each wash. These should last a long time with proper maintenance.

    these are very close to being of the same quality as the much more expensive brands at a fraction of the price. they're very easy to season and always work great without being too heavy or difficult to clean

    Excellent pan with a sturdy handle that fits well in my hand. Sturdy construction and quality assembly. Take the time to season them well, take care of them, and you'll get years use out of these pans. Amazing value.

    Very good pan to use for mixing small dishes, remember this pan gets hot very quickly so be sure to wear gloves when handling this pan.

    I bought this as something to use for items my cast iron cant/wont handle. I'm off of nonstick for the most part, but having a pan that heats up fast and can be tossed by hand. I use this for tons of things, anything any other pan can do. The walls are rounded and that can be hard to get to things in there with a spatula, and the handle does flex when there is lots of food in the pan. But for the 9ish dollars I paid it still gets 5 stars, be sure to buy a hot handle or use a towel, as the handle will burn you.

    Arrived quickly, in great condition, and bright and shiny. After seasoning this pan with Flax seed oil (An hour in a 500 degree oven, six time), it took on an almost obsidian blackness. Not as stick resistant as Teflon, but works awesome regardless and will last forever.. 11 inches is great size for smaller dishes like a single steak or couple of burgers. Tough too. Have dinged it numerous times and not a dent.

    You can't beat the price and the fact that it doesn't have a riveted handle is not a problem because it's very solidly built. It conducts heat well and gets the job done.

    This is my favorite saute pan in the kitchen. It heats up in no time, holds temp very well, and is oven, grill top, and stove top friendly.
    The French Style 10 7/16” Carbon Steel Fry Pan is a good quality Fry Pan. The handle is firmly attached and it doesn’t get too hot. It heats evenly and is very easy to clean. This is great for commercial and residential use.
    We've had these for two years now and they are still working fantasticly. They're super easy to clean and to season and they cook evenly.
    Fairly heavy duty, considering the price I paid. I use these everyday. They heat up quickly, and haven't warped from putting them in the triple sink when screaming hot. I would give this 5 stars, but one of the 6 pans I bought has a slightly wiggly handle.
    This pan as been great in our restaurant for a variety of uses. We use it for frying and for cooking vegetables, among other things. The price is very competitive!
    I am enjoying these pans. We purchased them for our new induction cooktop. Definitely go through the process of seasoning them and clean them right away after use. Drying them is also important so they don't rust anywhere.
    Great all purpose frying pan at an amazing price. Works great on an electric range but agree with other reviewers that it does develop hot spots. Handle gets a little hot but using a towel does the trick.
    This pan is sturdy, but thin. It does develop a hot spot on the center when used on an electric range, but should be good on gas. It definitely must be seasoned before use, but is good after that.
    Pan shipped quick and when received, I could tell this was a high quality pan. Easy to season, heats quickly, evenly, no complaints at all! Perfect size, exactly what I was looking for.
    For such an inexpensive pan, this one is very good. I wanted a nice large fry pan for certain tasks, but I didn't want to spend a lot on a heavy aluminum unit or clad unit. The heat distribution is good and it has a nice handle angle. Its a little soft, but I think it may get better with age. Seasoning on a home range is tough since its so large, but take your time.
