What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
How is top diameter measured in frying pans, and how accurate is this measurement?
The top diameter is the measurement across the frying pan from the interior of one side of the rim to the other. These dimensions are a close approximation as many frying pans have a curved upper rim, which makes precise measurement difficult. The standard naming is by top diameter, so although multiple brands have a 10” frying pan, there will likely be a small variation between each brand’s 10” pan.

    pan handle pans more stick surface grits hands oils types
    The design never gets hot but what really impressed me is how the design feels more secure in my hand from spinning even if my hands have water or oils on them. Its more secure of a grip than my other pans.
    The first thing I fried in oil was chicken and was surprised that it did not stick to the pan very much. When the pan arrived it had circular machining marks inside. I decided I could improve the pans non stick qualities by sanding its inside bottom surface with an orbital sander. I started with a 120 grit paper and proceed through at least eight ever finer grits until I finished with 2000 grit and a nice mirror like smooth reflective surface. I again fried the same type of chicken breast in oil and this time there was virtually no sticking. I conclude that if I use plastic and wooden utensils and hand wash the pan with nothing more abrasive than a sponge or plastic pad and "Barkeepers Friend" cleanser polish that the non stick surface will endure.
    This is an awesome frying pan great quality and built a less we have many uses for it and I would recommend it for all types of restaurants .
    The 16” Aluminum-Clad Stainless Steel Fry Pan with Helper Handle is well made and sturdy. It heats evenly and the handle doesn’t get too hot. It is great for residential and commercial use.
