How can I best maintain the non-stick qualities of this item?
To prevent food from sticking to your non-stick surface, we recommend lightly coating it with oil and wiping off any excess with a soft cloth or napkin. Applying sprays on non-stick coatings can cause food to stick more readily than using a fat or oil. Sprays can leave a glue-like coating, often missed during the cleaning process, which will begin to build up and cause foods to stick. Additionally, metal utensils and abrasive cleaners should not be used with non-stick surfaces to prevent scratching and damaging the coated surface.
How is the top diameter measured in frying pans and woks, and how accurate is this measurement?
The top diameter is the measurement across the pan, from the interior of one side of the rim to the other. These measurements are approximate because many frying pans and woks have a curved upper rim, making precise measurement difficult. The standard naming convention uses top diameter, so while multiple brands may offer a 10" pan, there may be slight variations in size between each brand's 10" pan or wok.
What is the maximum temperature this Vigor frying pan can withstand?
This Vigor frying pan should not exceed 450 degrees Fahrenheit to ensure optimal performance and longevity.
What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.
For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
Why is the bottom of this cookware slightly concave?
This cookware is designed with a very slight concave bottom surface to allow the metal to expand when heating up without warping. This feature allows for the cookware to still be induction-compatible and will ensure optimal operating temperature when in use.

Since I got this pan, I've made paella a half dozen times with a nice dark crust on the bottom, sauted quarts of chopped vegetables, and heavily reduced some sauces. The Excalibur coating looks like new. I expect this pan to hold up for years. Works well on both induction hob and electric stovetop.
If you want a lid for this pan, the Vollrath / Lincoln 3912C Optio 13 3/16" Cover (9223912c) fits absolutely perfectly, while the Vigor 12 3/8" Stainless Steel Replacement Lid (473sscovr5) is much too small.

Compared to my 12" cast iron, it buzzes louder on my induction range during warm up, but that was expected with the aluminum clad bottom. On induction, the handles are cool to the touch after cooking. If I'm making something extra sticky, such as a sugary sauce or cheesy eggs, this is the pan I'm reaching for.

I really like this pan. I bought it for use in my home kitchen. I really like how there's no long handle to get in the way, and it holds the heat nicely with the thick aluminum clad bottom. I do have some scratches on the pan already, likely due to salt. I like to cook a lot of potatoes in it, and I salt them in the pan, then push them around a lot to cook evenly. Other than the salt, I don't think anything else has caused any scratches. But salt seems to scratch any pan I've ever used. All in all a great pan that I hope will last me many years! The handles do get hot if the pan sits on the burner for over 10 minutes, but that's not a big deal. I recommend this pan.
