Crafted with fresh sheep's milk, this cheese ages for only 5-8 months to produce a firm cheese with strong, tangy tasting notes to add a salty zing to your dishes. The aging period not only gives this cheese a deep, complex flavor, but it also creates a dry, granular texture that makes this cheese perfect for grating. As one of the most popular hard cheeses produced in Italy, this cheese boasts the PDO designation, certifying that it is produced in a specific protected denomination of origin (PDO). Strict production methods and guidelines ensure this cheese is authentically made and has the prized flavor and terroir of the region.

Similar to parmesan cheese, pecorino romano is a hard grating cheese that is perfect for garnishing dishes, although pecorino has a stronger, tangier flavor than parmesan, since parmesan cheese is made with cow's milk. Parmesan also possesses a harder texture due to it's longer aging period. When using pecorino in place of parmesan, you should use 1/3 less cheese than the recipe calls for to account for the saltier flavor of the pecorino. Use this pecorino romano to create smooth, silky cacio e pepe in your restaurant or make crunchy pecorino cheese crisps to garnish house made soup. Mix shredded pecorino into a decadent potato gratin, leafy green salad, or herbaceous pesto sauce.
