This young mimolette cheese has a firm texture and sharp, nutty flavor with fruit and caramel notes that will stand out on a cheese plate, salad, or egg dish. Crafted in France, this cheese is made with high-quality cow's milk from Normandy that is incredibly rich with a high fat and protein content. Once the milk is heated and the rennet is added, annatto, a naturally-occurring plant-based orange coloring, is added to give the cheese its signature orange color. Then the cheese is aged for a minimum of 3 months to develop its sharp, nutty flavor and deepen its color. Once aged, the cheese emerges with a thick, uneven natural rind and firm center with sporadic holes.

Similar in flavor to cheddar cheese, this mild cheese is not tangy or funky, making it a great crowd-pleasing option. The hard texture of this cheese allows you to grate, slice, or shave it, for use in a variety of applications. Add a pop of color and complex, nutty flavor to a signature salad in your restaurant by shaving this mimolette on top.
