Dubbed "The King of English Cheeses," Stilton is the only British cheese to bear a certification trademark and PDO status. It can only be made in one of the three central English counties of Derbyshire, Nottinghamshire, or Leicestershire, from locally produced milk that is pasteurized before use. White Stilton® is made to the same PDO standards as Blue Stilton®; however, it does not contain the penicillium roqueforti mold and is aged for only 4 weeks, making it perfect for people for prefer milder cheeses with a bit of personality.

With a history as rich as its taste, Stilton is still handcrafted by expert cheesemakers, who regularly hand-turn the cheese during its ripening period to ensure optimal flavor, as well as hand-rub to develop its characteristic golden crust. Always formed into a unique, cylindrical shape, this unpressed, semi-hard cheese delivers a crumbly, creamy texture with a tangy, acidic taste that is mildly sweet and bursting with tart cranberries to enhance its sweetness.
