Garland Induction

Garland Induction

Imagine the perfect union of cooking power and energy efficiency. More powerful than gas, more efficient than radiant heat. Imagine that instead of transferring heat from a burner to the cooking vessel, that the heat occurs only in the cooking vessel itself. No pan, no heat. That’s the magic of induction by Garland. Cooking heat so powerful yet so efficient it can truly be called green heat. Traditional forms of cook tops conduct heat from a burner to the pan, but with induction powerful coils within the induction unit produce a magnetic field, that induces a current within the cooking vessel causing it to heat up. The result is much greater precision and energy efficiency than gas fired or radiant electric burners. And, since the heat originates in the pan itself, there’s no wasteful release of heat energy into the surrounding air, so you get ultra-precise cooking control that conserves valuable resources and helps make the kitchen a safer, more comfortable environment. Let’s face it, in North America gas is the most popular cooking fuel by far. That’s because in the battle between efficiency and power, most chefs choose power. But with induction you don’t have to choose. Induction is far more powerful, yet up to 70% more efficient than gas. Imagine being able to bring a full pot of water to boil in half the time. But not only is induction by Garland powerful, it’s extremely precise, too. This is most evident in low temperature cooking where with traditional forms of cooktops, it’s impossible to set a precise amount of heat. With induction, for everything from delicate sauces to melting chocolate, the chef can set the unit on low and remain confident that a consistent amount of heat is generated. No need to babysit the pan or worry that heat fluctuations will ruin their creation. Garland products have been driving best in class commercial food service operations for decades. The Garland brand is known the world over for innovation and reliability. Garland continues this trend with its line-up of induction cook tops. When it comes to power options, the leading competitor doesn’t even come close. Garland offers induction ranging in power from 3 ½ to 5 kW. Garland offers a complete range of portable induction that includes standard tops, wok tops, and a holding and warming line. They’ve taken it even further with an entire range of unique and innovative built-in solutions that allow you to put induction right where you need it for unparalleled high performance work-flow and kitchen design. But when it comes to innovative uses for induction, nowhere is Garland’s innovation more evident than with the only commercially available induction griddle. Those familiar but traditional griddles know they are notorious for taking a long time to heat up to temperature. They’re slow to recover and rarely deliver consistent temperature across the surface. Garland induction griddles are anything but traditional. Imagine a griddle that reaches maximum temperature in under three minutes with absolutely consistent temperature across the entire surface. Notice the consistency of the browning between cakes in this mini pancake test. Recovery time is unprecedented as well. Place a load of frozen burgers on a traditional griddle and wait and see how long it takes before you’re back up to cooking temperature. With Garland’s induction griddle the wait time is insignificant and recovery is so fast the unit is back up to full cooking temperature in under two minutes. While on the surface it may be hard to tell the difference between the various makes of induction on the market today, under the hood there’s a world of difference. From commercial grade circuitry to shielded components that ensure long life, Garland’s performance and reliability is unmatched. But the most important difference between Garland and all others is the energy is monitored and controlled. Where other units fail, Garland performs with its exclusive RTCSmp® sensing system. When a pan is heated, the center of the pan can rise. Unfortunately, this is where the heat sensor is located with many induction units on the market today. Not so with Garland. Our exclusive RTCSmp® sensing system has not one but three sensors which are strategically located at the side of the center to ensure positive contact with the cooking vessel for greater accuracy when sensing the temperature of the pan. Not only does this protect what is being cooked, it protects the induction unit itself. Also, the magnetic properties of cooking vessels can vary according to manufacturing standards, but Garland sensors communicate with the cook top to ensure the correct amount of energy is being sent to deliver maximum cooking power, efficiency, and safety across a broad spectrum of available cookware. Induction kitchens are cooler kitchens. Because the units don’t emit heat, the working environment is improved. Induction kitchens are cleaner kitchens. Food isn’t cooked or seared to the cooktop. A simple wipe is often all it takes to clean the surface. Induction kitchens are greener kitchens. Greater energy efficiency through a precise method of heating food creates less load and strain on HVAC systems overall. Induction kitchens are beautiful kitchens. For theater cooking, induction presents a modern design sure to impress guests. Look at this lineup at a leading college which is years old but still looks like new despite its daily high-volume use. Induction kitchens are smarter kitchens, with unprecedented precision, power, and efficiency, combined with high-performance work-flow and kitchen design. Leading food service operations around the world have already have already made the switch to Garland induction for their cooktops. They know there is simply no better technology for the heat on demand and cooking power they need with the efficiency a modern day food service operation requires to be competitive and environmentally responsible. Induction by Garland is no sacrifice, no excuses cooking. The power you need, the efficiency your bottom line depends on, the flexibility to perform to even higher standards for even greater success. The durability the Garland Brand represents. Induction by Garland, the perfect union of cooking power and energy efficiency.
