This particular griddle boasts up to 12,000W of power and a thermostatic temperature control for every 12" of griddle surface that make it a fantastic choice for busy eateries, diners, and take-out restaurants! Great for delicate breakfast foods like eggs and pancakes, as well as your lunch menu of chicken, hamburgers, and other meats, this unit's thermostatic controls offer a temperature range of 150-450 degrees Fahrenheit, while the 1" thick, 36" wide polished chrome plated cooking surface features an impressive 20 3/4" depth that is sure to deliver all of the workspace needed and impressive recovery time. With this griddle, you will no longer have to worry about delicate foods like fish or sunny-side-up eggs getting stuck on the plate and torn apart. The surface prevents sticking and browning of foods, making it easy to flip pancakes and burgers while maintaining a clean surface. Unlike steel griddles, the chrome plate griddle does not absorb food particles. This greatly reduces flavor transfer, so ingredients with potent flavors such as onions and garlic will not carry-over into subsequent meals. Not only do you receive the griddle, but you get a 2 drawer refrigerated base to place it on, as well! This particular chef base features a durable 1 3/4" stainless steel top that can hold up to 880 lb. Equipped with a marine edge, the unit's top helps to contain drips and spills for easy cleanup. For maximum capacity, each drawer can hold up to 1 full size food pan and (3) 1/6 size food pans (sold separately). The 1/3 hp refrigeration system circulates R-290 refrigerant and is easily operated by its electronic temperature control, which allows you to set the unit to hold prepared foods and ingredients at temperatures between 33 and 41 degrees Fahrenheit. How should I care for my chrome top griddle to best maintain its nonstick and heat retention properties?

Chrome top griddles offer many advantages over traditional steel plate griddles, but to keep them in top condition, special precautions should be taken. Sharp contact with the griddle surface, such as chopping meat, is not recommended. This will help to minimize deep scratches and abrasions. Teflon® or other non-metal utensils are highly recommended.

Your griddle should be cleaned with warm, soapy water. Gentle scrubbing with a green scouring pad will take care of any spots that are more stubborn. Harsh chemicals and abrasive cleaning tools should be avoided, as they can damage the chrome surface.

I haven’t heard of R-290, R-600a, R-513a, or R-448A refrigerant before. What is it?

R-290 (also known as high purity propane or CARE 40) and R-600a (also known as refrigerant grade Isobutane or CARE 10) are hydrocarbon refrigerants. R513a (also known as Opteon XP10) and R-448A (also known as Solstice N40) are HFO (hydrofluoroolefin) refrigerants. They are being used by some manufacturers in response to the EPA’s Significant New Alternatives Policy (SNAP) Program.

What kinds of pans can I use in my refrigerated prep table?

While various configurations combining traditional 1/3 size, 1/6 size, and other food pan sizes are possible, it's important to refer to your equipment's Specification Sheet and/or Owner's Manual to see what pan sizes and configurations are recommended. Certain accessories may be needed in order to use pans of a different size than what is recommended. It is also important to note that mixing and matching pans from different manufacturers may result in the pans not fitting properly.
