Much better than electric stovetop griddles. I have an induction stovetop, and it turns out induction stovetops do not work well with griddles. Very few multi-burner griddles are induction compatible, and the ones that are compatible have terrible hotspots. I got the Vollrath, and the experience has been day and night compared to stove-top griddles. I chose Vollrath over Avantco, since it's a few inches shorter, 10 lbs lighter, should heat up faster, looks nicer, and takes up less counter space. Temperature control has been spot on. It heats up exactly to the selected temp in around 10 minutes. Edges are about 50-70F degress cooler than the center. If you want absolutely uniform temperature, Avantco may be better, since the surface plate is 30% thicker. It uses a lot of electricity, so make sure you use a dedicated 1800w electrical circuit.
