How to Clean a Vollrath Griddle

Okay so first thing you want to make sure you turn the temperature off, and then take this scraper and take the grease or any of the residual food product and bring it to the front. And then in the front here if you just take this spatula, it’s not going to fit. Spatula wide is a term people will use and it means that the width of your spatula that you typically use for turning that could fit in this trough or the front grease area that you pull the grease into the center. This unit doesn’t have it, but if you take this unit and put it on a bit of an angle, I don’t know if you can see that back there, it still works. We’re not spatula wide, but it does still drain that grease down to this edge. It’s a small little unit. You don’t want to waste too much space for this simple grease collection area. Now there are two methods to clean this. There’s water and there’s griddle stone. So the first method, we’ll take water—just plain tap water—we’ll put it on here, and it’s going to create some steam. Last time it fogged that mirror up a little bit, but what it’s going to do, it’s going to boil up this little bit of debris that’s on the top. I’ll just use a little bit to show you. Simply all it does. Follow it back up with this just to get that debris to boil up. So, just scraping it down will bring that all to the front. Not ice cubes, any liquid that’s just going to give you something here to have that product boil up. Now, the other method is the griddle stone. With that you want to take a little oil—just fryer oil, vegetable oil, doesn’t matter—little bit of oil that acts as a lubricant now for this pummus stone. Take the stone on the griddle and just work it back and forth. If you had enough time here, we could actually get this to look brand new again. This pummus is actually acting as an abrasive, right? I’ll just focus on this one side here to make things move a little quicker. You can see here how it’s going to get that griddle back to…especially this side that I focused on. Then, you want to go back over it again with a towel or something and then someone in the last session suggested that you might even want to go back over it again with the water to get any of that little bit of pummus that is left there and a 3M scrub pad when it cools down a little more just to make sure you get all that pummus off. But you can see this side that I focused on with the pummus, the griddle stone, how much cleaner it got. And then at the end, you would take the grease drawer again and empty it out. That’s the countertop griddle. It would be the same process on the gas or the electric.

Let’s start with a little countertop griddle. This is the 120V griddle we’ve been talking about. Basically the set up on these is pretty straightforward. You want to make sure your grease drawer is empty, set your thermostat. These are thermostatically controlled. And the important thing to remember again about our electric griddles, these are not the solution. These are not the back of the house heating grill we’re going after. Here we’re looking for operators that we can provide a solution for something that is small, portable, flexible. Again, unique specialty items maybe in the case of this unit for being outdoors at a brunch setting, something else that’s a specialty type setting—120V caterers, food brokers—this is something nice for like convenience stores. They make little egg sandwiches. They can cook the eggs on here and then they’ll take them and put the sandwiches in their little merchandiser units. This is something not to compete against the big griddles. This is a small griddle: ½” thick griddle plate, 1800W 120V unit. The most wattage you can put on a 120V circuit is 1800W, so we are maxed out on this product. So what I’d like to show you today, I’m just going to cook some bacon try to make a mess on it to show you how to clean it up now. Bacon’s a pretty messy product, but we all know how we could cook pancakes on here, eggs, toasted sandwiches, anything you can cook on a normal griddle, you would certainly be able to prepare on these griddles. The question was do we want to season these griddle surfaces first? Just to season all you want to do is get the griddle hot, let the oil work into it, wipe it down, lower temperatures just let that oil kind of absorb into it. All I’m trying to do with this bacon is just show you that 1800W of power is plenty of power for anything you want. The element in this griddle will go back and forth; it’s a serpentine. It doesn’t just go as a U-shape. It’s more uniform throughout. This is our 1800W unit, and I’m only cooking here at 350. It’s plenty of power, right? 1800W that’s certainly enough for anything you want.
