Set up and adjustments. Horizontal blade. To insert the horizontal blade after choosing the desired cut, smooth or serrated, slide it into the opening and hold it like this. Beware that the blades are extremely sharp. A click at the end will indicate it has been inserted properly. To remove the blade, push the small pusher. Julienne blades. Select a blade from the storage box underneath the frame. The julienne blades should only be handled by their gripping zone as they are extremely sharp. During insertion, be sure to unscrew the ramps so they are released. Open the two small bolts and align the marks on the blade with the Ultra mandoline. Insert the blade like this, then secure with the two bolts. Adjusting the cutting height. Slightly loosen the wing nuts and adjust the cutting height with the aid of the marks on the frame. Then, tighten to lock in place. The pusher and carriage. The carriage slides on the rails of the Ultra mandoline. The pusher is placed like this and allows safe slicing operation. Use. Smooth or serrated cuts. Use the horizontal blade without the julienne blade to make circles or slices. Place the horizontal blade smooth or serrated side according to the cut desired. For greater ease, disable the dicing system. Pull away the carriage to place it on the dicing system and then secure the two bolts on the frame like this. Now, you are ready to make round slices. For cutting all long items, it is preferable to place the product in the direction of its length and turn slightly to the side. Waffle cut. Place the horizontal blade on the serrated side. Disable the dicing system. Adjust the tray for a very thin thickness on mark two and raise the tray while locking it. This position can be adjusted according to vegetable length. Place the product inside the carriage and then make a first pass like this. Next, after moving backwards, turn and go forward again in the direction of the blade. Then, repeat the process. Dicing. Loosen and release the tray. Place the horizontal blade smooth side. Then place the selected blade, two, four, or ten millimeters. Adjust the tray according to the indicators vertically engraved inside the frame according to the blade selected. Place the product in the carriage, make a first pass, and remove the first cut. Turn the carriage to a 90 degree rotation guided by the marks on the bottom. Again, push the carriage toward the low end. Repeat the process until the product is sliced completely. Tip. For easy and open slicing, make rapid movements. Caution. If the ramp is set too low, the dices will not detach. Diamond cut. The process is identical to that of cutting dices. The only difference is to make a rotation of about 45 degrees. Make at least a quarter turn. Different diamond shapes are possible according to rotation of the pusher. Julienne cut. Place the horizontal blade on the smooth side. Insert the julienne blade selected, two, four, or ten millimeters. Adjust the height of the cut by referring to the guide marks, then move back and forth. Caution. You must stay within the line as so to not make a dice. To make extra-large, pont neuf type french fries with a ten millimeter blade, bring the ramp to the lowest setting when adjusting the cutting height by forcing the tray position like this. With the Ultra mandoline, it is also possible to make waffle julienne slices. In this case, place the horizontal blade on the serrated side and use either the four or ten millimeter julienne blade. Maintenance. This professional tool has the advantage of being easy to clean and may be washed in the dishwasher. The blades are made of cutlery-grade stainless steel and may be placed in the dishwasher, but hand washing will increase their lifespan. For thorough cleaning, the pusher is completely removed. For best results, it is advisable to occasionally place a little cooking oil inside the dicing system to regularly lubricate the frame joints for easy handling of the carriage.
