This is the Bron Coucke gourmet mandoline. A handy vegetable cutter without standing product difficulties makes it possible to obtain flat slices or crinkle-cut sticks and slices easily. Ergonomic handles, four interchangeable cutting blade blocks, stainless steel blades with a special cutlery composition, a reversible tool, simple and speedy thickness adjustment. The gourmet mandoline is a ready-to-use tool built to last. Position the mandoline in the desired direction according to the type of cutting you intend to do. Remove the cutting blade block if it is attached. To do this, slide away the securing bar completely to uncover the cutting blade block and remove it. Bring the flat blade as close as possible to the support plate and lock the button. The lever underneath the support plate enables you to adjust the cutting thickness. Scrape the vegetable from top to bottom down the mandoline. In one direction you can obtain smooth slices and wavy slices in the other direction. According to the desired thickness of the sticks, choose among the four interchangeable cutting blades to achieve two 10 mm spacing between the blades. To fit it, first move the flat blade away from the support plate and lock it in place using the button. Slide the cutting blade block into the receptive lugs in the direction indicated by the cross. Then, close the locking bottom. Adjust the cutting thickness using the lever under the support plate. You can cut the vegetables along their length simply by scraping them down the mandoline. The knives of the gourmet mandoline are particularly sharp and Bron Coucke recommends that you always use a safety guard. Whatever their size, vegetable pieces are firmly held in place by the stainless steel claws on the guard. To keep your gourmet mandoline in tip-top condition, you should ensure your blade is always sharp. The blade and the cutting blade blocks should be washed separately under running water. The frame and the guard may be washed in your dishwasher. After drying them, pack the cutting blocks away carefully in the compartments of the special box designed for this purpose. When storing the gourmet mandoline after use, we recommend that you hang it up. This will avoid the blades being damaged by other items.

This is a multi-purpose tool, perfect for cutting fruits and vegetables into sticks and flat or crinkle slices and for obtaining elegant and appetizing presentations. All types of slices can be carried out quickly and easily using the same device with no accessories necessary thanks to the various built-in settings. Fold out the supporting leg, locking it in place under the edge of the large plate as shown. Your mandoline is now ready to use. Cutting vegetables into flat slices is achieved using the central cutting plate. You should first prevent the crinkle plate from cutting by lowering the lever. You need to do the same with a set of knives. To disengage this cutting set, firstly raise the large plate using the lever. Then, disengage the set of blades by pulling on the handle. You can adjust the cutting thickness to suit your needs by lowering the large plate to various levels using the lever. Now, all you need to do is slide the vegetable from top to bottom down the mandoline to obtain perfect slices.
Cutting vegetables into sticks is carried out by using the built-in set of blades that looks like a comb. To put them in the cutting position, raise the large plate as high as possible using the lever. Pull the handle and lock it in place using the pins to bring the set of blades into play. Then by lowering the large plate to suit your needs, you can obtain the cutting thickness you want. All you need to do now is scrape the vegetable from top to bottom against the mandoline to produce French fries, straw potatoes, matchstick potatoes, and other grated vegetables.
Cutting out crinkle vegetables is achieved using the built-in crinkle cutter plate. You need to prevent the strip cutting set from touching the vegetable. To do this, raise the large plate in order to lower the set of blades. Then, re-position the large plate, ensuring that it is lined up with the central blade to prevent the vegetable from catching. Use the lever on the crinkle plate to adjust the cutting thickness. To obtain enhanced crinkle effects, cut once holding the vegetable in one direction and make a second cut turning the vegetable one quarter of a half of a turn and so on.
You can achieve a fluted effect or cut vegetables into wavy sticks or serrated round slices in two operations. The first is carried out using the crinkle plate in order to produce the fluted effect or cut thick slices. And the second, using the central cutting plate to obtain serrated round slices or wavy sticks for example. Depending on the cutting plate being used, don't forget to ensure that the other plates are not operational.
The guard makes it possible to cut precisely in complete safety, except for cutting on the crinkle plate. Great care should be taken for crinkle cuts, fluted effects, or cutting out wavy sticks or discs. Bron Coucke recommends that you use the guide wherever possible. After having adjusted the cutting plates to the desired thickness, insert the guard into the runner like this. Place the vegetable into the compartment. Close the cover and move it from top to bottom using the handle.
The mandoline is designed to require very little maintenance. However, here are a few tips from Bron Coucke. Ensure that the cutting parts are neutralized before cleaning. Clean the mandoline under running water after each use to remove undesirable starch and juices. Sharpen the central blade regularly with a stone. Check the tightness of the nuts from time to time. And, when putting the device away, hang it up in order to avoid wedging it between two heavy objects, which may damage the blades.

I brought this some time ago and cut my hand twice trying to cut potatoes. I thought it was the grip on the guard blocking it. Hence some time later I got the courage to try eggplant. Still having trouble slicing. The blade should be razor sharp but its not. After taking it apart, It in fact, looks a bit rigid. I was so excited to purchase this after graduating from culinary school but I find that my knife has better quality and more reliable. Very disappointed for the price I paid.

Built well, but the blade replacements have to come from out of the United States, and are a bit expensive. In one year, we’ve had to replace the blade once, and are now shopping for a different brand. The set screw has loosened up, causing the blade to move and damage product - this is something that just started a week ago.
However, we slice approximately 100lbs of onions with this slicer, so we are assuming that is high volume for this product - hence the 3-star review.

A mandoline is an essential tool in our kitchen and this particular mandoline is the best we've ever hard. Durable, easy to use and clean and doesn't take up too much space. And to call the blades sharp is an enormous understatement.

We use this for slicing onions, tomatoes and cucumbers for our prep table. This mandoline is sturdy and does the job well, Extra blades are helpful. Overall a good buy for restaurant use.
