Today’s food service employees? One generation was born hardwired. Another generation likes things simple, thank you very much. And then there’s your chef, who’ll use whatever’s and whomever’s at hand to deliver consistent results. Introducing Epicon from Hobart. Epicon is a visual interface currently available on Baxter ovens and Traulsen Blast Chillers. While the equipment serves two entirely separate purposes, having a common interface means that food service staff can move easily between equipment, maximizing your investment. A shared menu design in two modes, manual, which gives a chef complete control, and auto, which can be preprogrammed by the chef for easy recall by anyone in the kitchen, simplifies things right from the start. Let’s take a closer look at how a chef can create and save casserole chilling instructions on their Traulson Blast Chiller. To start with, the chef chooses an operating program, by temp or by time. Using the down arrow, the chef enters the desired end temperature. Next, the chef can select one of four chill methods: standard, speed, delicate, and energy. The chef enters the product name, lasagna for example, and username. The chef can hit save or start. Once the chef saves a chill setting, anyone on the staff can recall it to ensure consistency using auto menu, which can be launched two ways: by selecting the food item, or by simply inserting the probe chill. With the probe chill, the blast chiller will automatically launch into auto menu function. The chiller will begin chilling and will beep when the food has reached the default target temperature, in this case, 32 degrees. Using the toolbox, the chef or manager has full control on default settings. When the chef inserts the probe chill and closes the door, the unit does the rest. It’s that simple. If you choose, add HACCP data before or after the chill cycle on the auto menu. Epicon uses the same menu steps on the Baxter oven, too, which makes it easy to train employees and ensure consistency. And because Epicon is from Hobart, you can rest assured that not only will you have the ultimate in usability, but the ultimate in dependability, too.

Featuring Epicon touch-screen controls, this unit comes with 3 modes, 4 chilling settings, and 3 program options. The four chilling settings (standard, speed, delicate, and energy-saver) allow you to refine the chilling process to deliver exactly the results you need for a variety of menu items. For complete flexibility, you can operate this unit with the temperature probe, by selecting one of your preset menu items, or manually. This blast chiller also provides complete HACCP documentation at the end of each cycle thanks to its on-board printer and USB port.

Perfect for chilling soups, sauces, meat, and poultry, the 13 tray slides accommodate up to 26 full size 2 1/2" deep food pans or 13 full size sheet pans. The stainless steel insulated door boasts a stay-open feature for easy loading and unloading. It's also self-closing and designed with a lock to keep the contents safe and secure overnight. The durable stainless steel exterior sides, front, door, top, and interior make this unit a long-lasting addition to your establishment. A galvanized steel exterior back and bottom also provide strength and durability.

The high capacity refrigeration system uses environmentally-friendly R-404A refrigerant and an advanced air circulation system to rapidly chill hot food to bring it down to a safe cold food storage temperature. Thanks to the remote design, you can place the condenser unit (sold separately) away from your crowded kitchen to help reduce heat and noise around the blast chiller. This unit requires a 115/208/230 electrical connection for operation.
