Chill up to 84 lb. of food from 160 to 40 degrees Fahrenheit in just 120 minutes with this Traulsen Centerline self-contained reach-in blast chiller! Quickly and efficiently cool your food through the temperature danger zone to protect meats, fish, and other foods from bacteria that could cause food-borne illness. Easily and accurately adjust the chill cycles or product target temperatures from 40 to 32 degrees Fahrenheit with the 2 13/16" digital LED display and five capacitive keys. This blast chiller can accommodate up to (14) 12" x 20" food pans or (7) 18" x 26" full size sheet pans.

The front, sides, door, and interior of this reach-in model are constructed of durable heavy gauge stainless steel, while the top, back, and bottom of the unit are made of reliable heavy gauge galvanized steel. The cabinet is insulated with 2" thick high-density, non-CFC, foamed-in-place polyurethane and includes one standard food probe for accurate readings. The chiller can be set to two different chill modes: soft chill for delicate applications and hard chill for denser foods. The unit has automatic defrosting for added convenience.

The right-hinged door is field reversible and has a stay-open / self-closing feature at 120 degrees to facilitate product loading. Plus, anti-condensate heaters are located behind the door to prevent condensation from forming on the front of the cabinet. Seven stainless steel wire shelves are adjustable on clips and pilasters, allowing you to rearrange your unit's interior to fit your specific needs.
