Increase the shelf life of valuable foods by cooling or freezing them in a flash with the Delfield CV5E 33" self-contained blast chiller / shock freezer! This blast chiller / shock freezer combination quickly and efficiently cools your food through the temperature danger zone to protect meats, fish, and produce from bacteria that cause food-borne illness. It features 4 cycles for blast chilling and 4 cycles for shock freezing, so that you can pick the option that most closely matches the food you need to keep. It can cool up to 44 lb. of food from 194 to 37.4 degrees Fahrenheit in just 110 minutes, and it can freeze up to 27 lb. of food from 194 to 37.4 degrees Fahrenheit in approximately 240 minutes (4 hours).
A specialized ice cream cycle can be customized to harden ice cream for display while still maintaining softness for serving. This unit also has a time chill option, which cools contents based on a time limit, and a temperature chill option, which cools contents to a specified temperature. It is also capable of continuous shock freezing, so you can process large quantities of food without waiting to cycle the freezer. Use the thawing cycle to control the temperature of food to prepare it for the kitchen or grill.
This blast chiller / shock freezer features chrome plated racks that can accommodate up to (5) 12" x 20" x 2 1/2" deep pans. To help you better implement your HACCP plan, this blast chiller / shock freezer records dates, temperatures, and times of different cycles so that you can track how long it takes certain foods to cool, freeze, or thaw. These readings can be configured into customizable reports and exported via USB, making record keeping easy.
The back lit control panel is mounted in the top of the door, for convenient access. It features a multi-language display so that the information is quickly accessible to members of your busy staff. 22 buttons and indicators on the control panel help you program specific settings to better chill different sizes, amounts, and types of food, and a single core probe measures and relays accurate internal temperature readings to ensure that your food stays at the correct temperatures at all times.
The interior and exterior of this unit are made of corrosion resistant stainless steel. The powerful bottom mounted 1 1/4 hp compressor circulates eco-friendly R-404A refrigerant. A 208-240V electrical connection is required for operation.
