How to Assemble and Load a Pouch with Server's ProPortion Handheld Dispenser

Your ProPortion handheld dispenser comes with 3 color-coded valves and 6 portion tabs. Before assembling, be sure to clean and air-dry all parts. Consult page 3 of the manual for cleaning instructions. Select your valve, and ensure the valve slits are open by separating them with the tip of your finger. Fit the valve into the cover, making sure to push the shapes through the matching holes. Install the diverter onto the valve by lining up the matching shapes. Twist the assembled cover tightly onto the body. Insert the desired portion tab, reset the spring, and then press the spring cover into place. Press the seal onto the flat side of the piston, and then press the rod into the piston. When using a Cryovac FlexPrep condiment pouch, smooth the condiment toward the pouch spout. Place the pouch in the body, so the pouch spout goes into the diverter center, and the pouch edges line up with the arrows on the outside of the cover. Insert the piston on an angle into the filled body. When it reaches the pouch, level the piston so there is no space between the piston and the pouch. Press the rod release to lower the handle to the top of the body. Stop pressing the rod release when the handle falls into place over the body, and twist until the handle is locked into the closed position. Pull out the portion tab while squeezing the trigger to pierce the pouch. Once the pouch is pierced, let go of the portion tab, and squeeze the trigger halfway to set the tab. ProPortion handheld dispensers arrive with the white 1/2 oz portion tab installed, but there are 6 different portion tabs to choose from. To change the tab, pull it out to spring the handle open. Press the rod-release to slid the rod down. Remove the seal and piston to reach the spring cover. Grasp the small spring cover handle and wiggle gently to assist in pulling it off. Holding the center of the spring in place, pull the end of the spring away from the notch in the portion tab peg and remove the portion tab. Insert the desired portion tab by placing the circular peg through the oval hole. Secure the end of the spring into the notch in the tab. And when you use the squeeze bottles, and you get particulates in there, you get a little piece of garlic in there, it gets stuck. You have no portioning - no portion control. You know, everybody's portioning it different. The Server dispenser we have was pretty much a game-changer in the kitchen in regards to portion control on not only sandwiches, but portion control of wings, as well. There's multiple ounces difference in what we were doing before to what we are doing now, so that's been serving us savings right off the bat. We portion up Ranch and blue cheese - literally thousands of them throughout the course of a week. This allows us to set a squeeze, you're not dripping over the sides as you go from container to container, and we used it on some of the thicker sauces and we had no issues with it being dispensed. Across, as you know, across several properties, and soon to be probably a fourth Parker John's, everyone's getting the exact same thing on a sandwich. It's a very well made product, cleans easy. You need to take them apart, put them in the dishwasher, put them back together. I thought they were very user-friendly and pretty simple to show someone how to use them.

There are so many different things that can go into this bottle without any issue just in terms of thickness, viscosity, between ranch dressing style and mayonnaise. So when you're squeezing something out of a squeeze bottle, like those chunks can get stuck in there and trip you up and cause a bit of an issue. With the ProPortion unit, we never have that problem. It just, you know, comes right out of the nozzle, the nozzle pinches off, and you never have a mess, and you never have any waste. Every single item on our menu is calculated to tell you about, we know how much needs to be on there, and this allows us to better regulate, better control, and makes sure we're serving our best product every time. Everything is super easy to clean. It's all dishwasher safe. You basically just throw it in there, dry it off, and it's ready to go. We've been using it here for about 2 months, and our food inventory numbers have both been a lot better. I definitely believe that I will be using it more for my restaurant.

It works with both single- and triple-tip models too, so no matter how the unit is configured, the cap ensures proper coverage.

The cap makes it easy to have a second dispenser prepped and ready to go in the refrigerator or storage area. When the dispenser in use needs to be refilled, simply swap it out for the full one so that there's always one on the service line.
