Originating from the mountainous, picturesque Molise region in Southern Italy, this ancient Molise caciocavallo silano cheese is one of Southern Italy's oldest cheeses. Crafted from the fresh milk of cows grazing on luscious grass near the Adriatic sea, this cheese boasts the PDO designation, certifying that it is produced in a specific protected denomination of origin (PDO). Strict production methods and guidelines ensure this cheese is authentically made and has the prized flavor and terroir of the region. As part of the pasta filata family of cheeses, similar to mozzarella, scarmorza, and provolone cheese, this caciocavallo silano cheese is created using the stretched curd technique, which gives this mild, buttery cheese its elastic texture and superior meltability. Once the curds are stretched and formed into a ball, a small rope is tied around the top of the cheese and it is hang-dried for at least 90 days, making for its finished tear-drop shape.

Its semi-firm texture makes it perfect for slicing, cubing, or grating, allowing you to incorporate its milky, slightly piquant flavor into a variety of dishes. Great for serving on a Italian-focused cheese board, this cheese can be cubed and served with authentic Italian cured meats such as soppresatta, Calabrian sausage, and capocollo.
