The Perfect Tuna

When handled properly, high quality tuna is healthy, flavorful, and beautiful. Tuna is both a simple protein to prepare and a rewarding fish to serve. In this video, Mercer describes how to prepare a perfectly seared tuna.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

Tuna is both a simple protein to prepare and a rewarding fish to serve, when handled properly high quality tuna healthy flavorful and beautiful. Begin with a trimmed thick center cut piece of tuna loin. Put your pan over high heat and turn your exhaust fan on. Add a high smoke point oil and give it twenty seconds to heat up. Before your oil begins to smoke carefully place the tuna into the hot pan some chefs choose not to season the fish before searing as the salt pulls out moisture and inhibits brown color from developing. Leave it to sear until it develops a beautiful brown crust usually about 30 seconds but it could be more or less time. It all depends on your burner. Once all sides are brown remove it from the heat and allow it to rest for a few minutes before slicing.

Holds edge very well. Super sharp out of the package. I love these handles on the mercer Asian style knives. Will not slip even if hands are wet. My hands sweat alot and I can still handle this knife.

Nice price compare to quality. Don't compare to a traditional Japanese high quality that make with hard steel. it's medium weight nice plastic handle but wood feeling grip. Nice shape of blade. It comes with very sharp edge. Nice for everyday use.

The knife looks very aesthetic. It is the best-looking knife on my knife rack. I would have preferred wood handle instead of the plastic handle. I rarely use this knife but I am happy with the performance when I have used it.

Beautiful looking knife Mercer did a good job on this one. Bought this one on a whim but glad I did. This came extremely sharp and the blade has a small traditional secondary bevel at the edge on one side. This should make it easy to re sharpen later on. The grind and finish are flawless you will not be disappointed.
Awesome knife. SO happy to have this knife I love Mercer and the price is awesome. I will recommend this to every one and any one!
I love how long and sharp the blade is on this knife. It makes slicing fish and meat easy, because you can cut with one long stroke instead of a sawing motion.
This is a very good quality knife at a great price. It comes very sharp and the handle is very comfortable to hold. It is very easy to clean and it doesn't need to be sharpened that often.
Awesome knife I used it when butchering all of my fishes it stayed sharp and was easy to use has a great grip on it. I love this knife
You will be surprised by how light and delicate this knife feels in your hands. It's quite long, including the handle. It barely fits in my knife case. I like it for slicing fish filets, tomatoes, peppers, and for removing the skins from slab bacon. A fun knife to have in your collection. The rubber handle is ideal for slicing slippery fishes and fatty cuts of meat.
Honestly one of the best sashimi knives out there for the price point. At this price, you can't get a known name like Mercer; a company that create great products for a even greater price.
Sharp, professional knife. Ideal for sushi and Japanese cuisine. Rubber handle makes it safely fixed in your hand. One sided sharpening. Nice product for reasonable price. Buy it with no doubt!
when i first got this knife i was very happy with it... it comes about 80% sharp... i love the handle and the fact that its rubber... the only draw back is that its very hard to sharpen its built like a traditional Japanese knife with most of the sharpening done on one side
This is a good sushi style knife by Mercer. It works nicely for slicing seared tuna. I can get thinner slices from this knife than a standard chef's knife.
We recently introduced sushi to our restaurant. This knife helps our sushi cook prepare a tasteful roll that our customers can enjoy eating at our restaurant.
This knife is perfect for cleaning fish like salmon or tuna. Very sharp and easy to maintain. Also the price is to good you can't beat it.
I recently bought this knife and have been looking for a knife like the ones we have at work. Finally after convincing myself to shop online I bought this one and am very happy with my choice
This is a great long sashimi knife! Great to use for the summer when fresh fish is most enjoyed! Add sashimi or crudo to your menu easily with this knife!!
This 12 inch sashimi knife is great for commercial use. It can deffinetly compare to the more expensive knives. Mercer makes some great products. Deffinetly a good buy.
