Glazed Carrots

If you're stuck in an ingredient rut during the cold winter months, shifting your focus to cooking technique can create endless menu possibilities. In this video, Mercer demonstrates the best way to make classic glazed carrots quickly and easily.

Grasp the knife by the handle allowing your thumb and index finger to rest on the blade for support. Before handling a knife, put a light to medium duty cut resistant glove on the hand opposite of the hand that holds the knife. The glove will stay on the hand until the knife has been cleaned and properly stored. Use the right knife for the right job. Keep it sharp.

Place the blade of the knife on the flat surface with the edge facing away from your body. Flip the knife and wipe the other side of the blade as well. Dip the knife in the solution and then take it out. Using a cloth soaked in the hot water solution, scrub the blade of the knife. Do it very lightly to prevent scratches. After you have removed visible dirt from the blade of your knife, clean the handle with soapy water. Rinse the knife thoroughly under running water. Dry the knife by using a clean dishtowel. Wash kitchen knives immediately after using them so that the food does not dry on their blades. It is never accepted to place your knife in a drawer without a plastic guard. Make sure that knives lying on flat surfaces are never covered with towels or napkins. After handling a knife, lay it down in a clear area with the blade and point away from the body and away from the edge of the table or cutting area. A knife guard is a rigged plastic sleeve that fully encloses the blade. A glass knife block sits on the counter offering convenient access when working and when safely putting knives away. A magnetic bar is a wall mounted magnetic bar design to hold knives firmly in place.

    I have never had such a knife as the Mercer Culinary M24307PL 7" Usuba / Nakiri Knife before. It has a wide blade that is super thin. For some reason, I thought the entire knife was 7 inches. In fact, the blade is 7 inches. Even with my duller knife, I would try to slice green onions very think, only to mash it up. This knife changed all that with clean cuts and cuts through the onion like butter. This is now my go-to knife for super-thin cuts.
    I never knew I needed a Nakiri knife until I first held this one in my hand! The flat edge instead of a traditional tip gives me comfort that I'm not going to stab myself. And the surface is large enough to rest it on fingers of opposite hand while cutting vegetables. It is very sharp and it is a breeze to cut any and all vegetables with the Mercer Nakiri knife. Prep work was never this exciting and easy before!
    This is a good quality Nakiri knife. It has a sharp blade and it doesn't dull easily. It is great for cutting vegetables. I would recommend!
    I absolutely love this knife. I have purchased this knife twice the first time I purchased it, it ended up stolen but I love it so much and the price was so great I had to get another one.
    This has become one of my go-to knives. It keeps showing new uses. originally bought to finely slice vegetables, which it does beautifully, I thought I'd try to make thin slices of raw beef and Voila! paper thin for wrapping and because of the width of the blade, there was no wandering on the cut. At one point I was slicing a delicate fortified bread. Even with a superb serrated bread knife, the bread was too crumbly to survive and look good. In desperation, i tried this Nakiri knife and produced perfectly smooth and well-textured slices which allowed for later toasting without burnt high spots. This Nakiri takes and holds a keen edge. We run it over a ceramic steel before every use and the results reflects well on our kitchen skills.
    I use this knife all the time for cutting veggies. For sushi veggies you want them super thin, and the blade on this knife is super thin and works well for that. Perfect for cutting cucumber skins in a solid sheet. I like the handle, because wearing gloves and rolling sushi makes for slippery handles. These are rubbery and have a sturdy grip so no slipping.
    This is a great sushi knife. If you are looking for a knife to make your sushi knife successful this is it. Would definite recommend this to all professional and home chefs.

    I believe that this Mercer Usuba knife is the finest cutlery value for the money that I've ever owned. The blade is easily kept razor-sharp with only light honing of the hot blade with a ceramic rod. I'm definitely going to try some of the other Mercer products to compare to my more expensive knives, and I anticipate that they too will prove to be superb quality for an economical price.
    Excellent sharpness right out of the box, and many hours of daily use on a variety of hard and soft produce shows great edge retention. I expect sharpening to be an easy task, as well. The handle had me skeptical at first, but it has just the right amount of give vs. firmness to give an excellent non-slip grip. I'm amazed to be typing this, but this inexpensive 7" nakiri with ry?ba edge has displaced my usual Henckel's 6.5" nakiri simply because the handle is more comfortable to use for extended periods of time. Overall, having used this for vegetable and fruit prep over the past couple of months has made my life easier, and I expect it will continue to be a kitchen favorite for years.

    This knife is basically a glorified razor blade. You can cut vegetables super thin, and it's got a decent balance so it's easy to control. I almost said 4 stars because I don't totally love the handle, but I think it's an excellent product for what you pay, and if you want something nicer you should pay more.
    Very good very sharp also had there Santoku knife I even like the handle better than the wood I use for everything not only VEG.

    This is a very nice, very light knife! It slices through carrots and other similar veggies. I would not use this on squash as the blade is very lightweight. I am very happy with the quality and would definitely purchase again.

    This is the second time I am purchasing this knife. There are some very expensive Usuba knives but I don't like to leave them around at work. For the price this Mercer does a great job. I use it for chopping vegetables as well as tuna for spicy tuna rolls. A good buy (everyone likes to borrow it at work)
    I love this knife! Very thin and lightweight blade make it a breeze to chop through veggies! I had originally purchased this knife for home use, but take into work for all my small prep tasks!
