Good knife for the price. I like to use this one for sushi roll cutting, as well as fish butchering. The pointed top comes in handy for getting a through the bones. If sharpened daily it holds a nice sharp edge.

This is a great knife. I don't use it for hours and hours like some folks, I just use it occasionally when I'm cutting sushi rolls or sashimi. It is sharpened on one side like it should be for the task. The length makes it easy to make a nice looking cut in one long pull.

I purchased this knife because I was already familiar with Mercer products. Yanagi knives can be very expensive however, I did not want to leave a very expensive knife at work. The Mercer did a very good job. I I averaged 20-30 rolls per lunch in a corporate dining facility and the knife definitely delivered for the price I paid!
